Order the 365 Days of Pressure Cooking Cookbook: www.365daysofcrockpot.com/ord... Instant Pot Breakfast Potatoes--seasoned, buttery, cubed potatoes that are perfect to go with a hearty breakfast or when making breakfast for dinner.
Printable recipe: www.365daysofcrockpot.com/ins...
You'll need an Instant Pot (electric pressure cooker) and a steamer basket. I prefer this silicone steamer basket (amzn.to/2LXMsmQ)*. It is flexible and works perfectly with a 6 quart or 8 quart Instant Pot.
Recipe:
1 ½ pounds russet potatoes, cubed (peeled or unpeeled)
4 Tbsp butter
1 tsp garlic powder
½ tsp onion powder
½ tsp smoked paprika
½ tsp kosher salt
½ tsp black pepper
pinch of cayenne pepper
Optional: green onions for garnish
Pour 1 cup of water into the bottom of your Instant Pot liner. Place the potatoes in a steamer basket. Lower the steamer basket into the Instant Pot liner.
Cover the pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes (for firmer potatoes) or 3 minutes (for softer potatoes) on high pressure. When time is up move the valve to venting. Remove the lid.
Remove the steamer basket. Dump out the water and dry the pot. Place liner back into the Instant Pot. Turn pot to the saute setting. When the display says HOT add in the butter and let it melt.
Add in the steamed potatoes, garlic powder, onion powder, smoked paprika, salt, pepper and cayenne. Toss the seasonings on the potatoes. Taste test and add more seasonings to taste.
Turn off the Instant Pot and then serve the potatoes and enjoy. Garnish with green onions, if desired.

Great recipe! I can’t wait to make this tomorrow. I have some Yukon gold potatoes that I’ve been trying to figure out what to do with them. Using the instant pot is brilliant because it’s so much faster and efficient then parboiling the potatoes and then sautéing them. I use the garlic, onion powder and smoked paprika in my deviled eggs as well, so I’m sure it will go well in this recipe. If you haven’t tried adding smoked paprika to your ketchup yet I would highly recommend it. Lastly as you were pouring the water out of your instant pot down the drain some advice from a plummer many years ago came to mind. He suggested that anytime you poured hot water from draining pasta or anything else that you should first run the cold water so that as you pour the hot water into the sink it dissipates the heat. He claimed it would add years to the life of your pipes. It seemed logical to me, and I’ve been doing it ever since. Thanks again for the recipe!

Thank you! Great video. Another option. Every week I cook up 4 - 5 whole potatoes (washed and fork holed) in the instant pot for about 12 minutes to partially cook. Then cool and place in the refrigerator. Ready to pull one potato each morning - chop up - toss into a heated skillet with a good oil. Heat up well and season to taste as I go. Easy breezy! 🥔🥔

These were called fried jacket potatoes in my family when I was growing up. My mom would cook the potatoes the day before and put them in the fridge and the next day cut and fry them up in bacon grease. They were jacket potatoes because the skins were left on. Probably my most favorite potato. Can't wait to try doing them this way. Thanks for teaching us how to cook great food in our Instant Pots!

Interesting take on softening the potatoes. Most people dont know that restaurants pre cook the potatoes normally they are boiled till the desired texture is pleasing and then grill the rest of the way. Way less grease involved better for the consumers. And actually very good end product. They do country style and hash browns. My brother had a restaurant in Idaho and bought steamed potatoes in bags and would just put them on the grill with a bit of oil to brown a bit. Was an awesome end product and a huge time saver for him. Farmer Boys in Southern California does them this way. I have a friend thats a manager of one and she confirmed thats how they do it. Ill have to try some out in the Insta Pot. Thats a hell of a way to do it.

Don't get me wrong- I'm OBSESSED with my Instant Pot; however, breakfast potatoes are meant to be made in a frying pan. You achieve a much better crispy texture. IMO. Plus the steps it takes to do this, you could've had the potatoes frying in the pan, cooked and fired to that perfect crispiness. I find that an IP is much better for soups and such that you want to really condense the flavor into at a much faster rate while achieving a richer, bolder taste.

A pinch of salt is what you can grab between your thumb and index finger, what you used was almost a tablespoon. Then if your going to use Ketchup that also adds a lot of salt. Being on a low salt diet I've found out that I can survive with what salt is already in the food. No extra is required.

I confess I like breakfast potatoes but they are mostly left over from previous evenings meal. I confess also that I make sure I cook enough so there are left overs. I don't do too much with thembut I may try to add a few thing as you have in future particularly garlic powder but I also like mustard with mashed potatoes in particular, whole grain type so I may experiment with that. Need to get more adventurous.

People with so much time on their hands these days have all become arm chair cooking quarter backs. Thanks for continuing to present us with recipes options. People needs to realize thats exactly what your videos are - OPTIONS! Nobody is making them use your recipes exactly as written. They are all welcome to change up the seasonings, cooking times, cooking process, etc. Geez Louise. Personally, I liked the idea of parcooking the fresh potatoes. To me, thats the longest part of cooking them. Once they hit that “just starting to get soft” stage, the frying stage goes fairly quickly. So again, thanks for continuing to present your recipes.
