Thank you for being honest with the reviews on your dishes. Sometimes what I make looks great but not everyone loves it. It’s definitely a trial and error. Everything you made in the video looks amazing. The taco pizzas were my favorite. I’ll definitely be making those. I love your videos and your stories!

Mel, I really appreciate that you are so honest about what you’ve made that you or members of your family didn’t really like! Another cook I watch has said that everything she has made was delicious, can’t imagine that 100% of everything you make would be wonderful! I live on the southern coast of NC and we are in high 80’s and low 90’s which is typical weather for us. I love your bakeware, I like pretty things too!

I love your honesty and reviews on the recipes. Every other person I watch says "this is delicious! You HAVE to make this! This will definitely be in our rotation." And it starts to get overwhelming with all of the recipes that are "amazing" and the best theyve ever had. I really like knowing what's worth the effort and what's not 😅

My late mother in law made a Mexican street corn dish she would serve at bbqs. She did not use cream cheese. She also added Conchita, small shell pasta. Cojita is just a basic farmers cheese, mozzarella would work. You might like it better leaving out the cream cheese. Thank you for reminding me of this dish and the wonderful woman who made it. So many memories are attached to food.

Hi, Mel. Your crunchy first lasagna story made me burst out laughing. I cook like you do..no fancy ingredients. I learned to cook when I was 10. My sister and I shared the housework, but I did all the cooking and she did all the laundry after my mother went to work when the baby started kindergarten. When I got married, I didn't have a clue how to do laundry and my sister didn't have a clue how to cook...hahahahaha. My mother wasn't a good cook, bless her, so she never in her life made lasagna. When I got married, any time I made lasagna, I would invite her and dad over. They loved it so much and she always said she didn't want to know how to make it because having me make it for them was always such a treat for them. I always loved it when she'd say that. She's been gone almost two years now, but I still make it for my dad. He requests it every year for Father's Day and his birthday and I make sure that happens. Great video, sweet Mel.

Cindy, what precious memories 🥰 I didn't know how to do laundry either, I was really in a mess. But my momma was very patient and helped me learn everything once I got out on my own with my husband. I think it's wonderful the way you and your sister pitched in and helped your mom when she went to work. I love that you made lasagna for your mom and dad all the time, I love to make food for my parents too. My mom is just in her mid to late sixties now. And she cooks dinner every Sunday for me and my family and my brother and his family. It is such a special time and I love to do for her whenever I can. I know you must miss your mother terribly, I can't imagine the hole that was left when your precious mother went to heaven. I'm glad you're still taking good care of your dad and doting on him too. You are a kind and compassionate soul Cindy, I'm so glad that we're getting to know each other. I appreciate you so much and I hope you have a blessed week. ❤

Those pizzas looked so good! My hubs has 2 favorites at Taco Bell & that's one of them, the Mexican pizza. It was so sweet to hear you talking about your daughter. I could feel the momma love coming through. And I also understand what you were saying about your dad. My dad was the baby, #16! Yes, his mom and dad had 16 children together, no multiples. My little grandmother (who was only 4'11) lived to 92 years old!

We loved the Mexican pizza, we can't believe they've taken it off the menu. And my youngest, she has always been funny with textures of food. She was a very early preemie at 27 weeks. So needless to say that little lady is rotten to the core 🤣 always doted on by big sister and everyone. Just kidding, kinda 😉 she is as sweet, kind, compassionate and hilarious person you will ever meet. We feel so blessed that God trusted us with her addition to our family. And WOW what a family! One thing is for sure, there were no picky eaters with that many around the table 😊 Can you imagine 3 meals a day for that many? Thanks so much for watching I hope you have a great week Angie!

Hi Mel! I love your recipes and stories about you meals! 😊 Im Mexican and love to cook for my family as well. I wanted to give you a few tips that might be helpful. The cheese you were talking about is Cotija (cotheeha) and to take the heat out of jalapenos, remove the seeds and rinse them real good. Then you just have flavor and no heat. I do this when I make my jalapeno poppers. Here's the recipe. Take the jalapenos slice long ways rinse them after you remove the seeds, add cream cheese. And wrap with bacon and cook in oven until bacon is cooked and jalapenos are soft. So good! and not spicy at all. 😊 Let me know if you try these and God bless.

Our restaurants make elote in a cup( mexican street corn). They basically just have buttered frozen or canned corn. They drain it into a cup. Top it with lime mayo, sprinkle of parmesan or crumbly cojita cheese, tajin seasoning, maybe a bit chamoy hot sauce. Nothing is mixed up. It’s all on top. It’s so good. My picky ( youngest) gets at least one dish he wants every week. Love your recipes.

Love it all Melanie! Everything looks so yummy. I make new recipes sometimes that we end up not liking so it is a trial and error sometimes. Love your story about the lasagna, priceless. There were 7 children in my moms family and 6 in my dads then when they got married they had 7 children of their own. So my parents grew up eating lots of beans and rice dishes, as we did also. My mom cooked everyday and I was amazed that we always had food left over even with 7 children. She definitely knew how to stretch a meal. I love hearing your stories, they are always enjoyable. 😊

And I appreciate your vote of confidence; people have some strong opinions on this subject but I just try to put myself in her shoes (I've been there too lol) and treat her with the respect and choice we would give any one else. It would be different if she were unhealthy, I would be more concerned. But sometimes the less you make a big deal out of a little thing, it will work itself out. Well it is now 3:18am an I’ve been binging on ur videos for the last several hours. I’ve been laid up with a busted knee since June of this year with no weight bearing and hopefully my next Dr visit he tells me I can weight bear and get bk to cooking. So I’ve been watching ur videos that looks simple enough that I don’t have to be up and putting pressure on my leg that long. Thank u.

Hi Mel, I hope to try all of your recipes, they look wonderful. It has been around 105 degrees here this week. We live in the Northwest so we are dealing with the horrible forest fires. The smoke is horrible, you can’t spend much time outside. Please pray for our firefighters and all of the people who have lost their homes. You are fantastic!

Mel looks like we may get some relief from the heat this week. Nashville is only going to be in the 60’s on Wednesday and Thursday as a high. I am so relieved and so grateful. This summer has been so brutal with the heat and humidity. Please give your husband my thanks. Lineman aren’t appreciated until the power is off. Bless him for going out there and keeping the lights on. A childhood friend of mine is a lineman and my father in law retired from TVA working on the coal barges. Also, give your daddy my thanks for being a firefighter. I worked 10 years in fire and rescue as both a firefighter and EMT. I left after my son was born as his daddy is a soldier so we both couldn’t have risky jobs. I miss it but my son was and always will be more important. I feel like the Lord guided me to the right choice

Breakfast for dinner speaks to my family! We eat breakfast for dinner weekly. Each week we have a different Theme; it’s Country theme with grits, sausage, eggs, cheese & biscuits; OR American theme pancakes/waffles with fruit & eggs OR Mexican theme Chorizo eggs, refried beans, over easy eggs & tortillas . I’m researching other options. Loved your lasagna recipe I’ll be trying that soon. You’re one heck of a cook. Love your no frills style!!!! I totally relate. I like to use cottage cheese too! I just made million dollar spaghetti for dinner using cottage cheese 🤤. So many yummy meals here. The Mexican street corn is so different from how I’m used to having it. It’s one of my favorites!

Awh, thank him for us, too! They are really underappreciated, they don't call them "first responders" yet they are the ones the firemen and police call when they show up to work a wreck at a power pole or need the electric pulled to put out a fire. And they work dangerous situations EVERYDAY. They are truly unsung heros in my book. And I dont mean to sound like I'm taking anything from the fire and police either, my daddy is an retired firefighter, they all work dangerous jobs.

You are so sweet!!! Thank you for collabing with me! Putting cottage cheese in lasagna is the only way I can eat it. My husband loves cottage cheese, but I just can’t do it. Oh goodness I feel bad for your husband and others like you mentioned who have to be out in the heat. I hope he stays safe and healthy. Everything looks delicious this week. It’s fun to try new recipes, even though sometimes they don’t always turn out

Me too, I hate cottage cheese in a bowl to eat 🤣 but I love it in lasagna 😋. I don't know how he does it, I'm a wimp in this heat. But we all do appreciate them I know. And yes, I so wanted to love that Mexican street corn casserole, everybody loves that stuff but it just didn't seem to taste right to me... Live And learn, right. It's been a great week of dinners anyway and I definitely enjoyed collaborating together we'll have to do it again.🥰

Taste of home usually has really good recipes! I have several of their cook books , but there is the occasional one that just doesn't turn out. My husband is a union roofer and that had to have extremely short days due to heat! Poor thing he was so exhausted all he could do was come home and pass out! Maybe take a couple bites of food, I hate that he does that for a living I have even tried to talk him into another job, but no go. The Lasagna story 😂😂😂 Boy oh boy! I had so many dinners I just demolished because I had no idea what I was doing! We had a lot of pizza nights and spaghetti! Lol

I am so glad that they are at least shortening the work day for your husband, this heat is so dangerous. And especially hot on roofs or asphalt. I'm glad you enjoyed my story and can relate to my lasagna saga. 🤣 I never put a lasagna together that I don't laugh about that and remember it fondly. Hi Mel! I really enjoy your videos. I get so many greay ideas. My husband also works for the city electrical department. He was a lineman for about 15 years. Now he does electrical maintenance for the department. Thankfully he doesn't get called out for emergencies very often in maintenance. All that to say, I know it's not always easy being a lineman's wife. Have a good week!

Even if it didn’t taste good, it looked good LOL It was definitely hot in Arkansas! Our air broke week before last on Thursday or Friday, and Saturday night ( I think it was Saturday night) went about 830 to Home Depot and got a window unit and they came last Monday and fixed it. Praise the lord! This week is gonna be 85-89, so happy for lower temps! 🙌 Love your story on the lasagna noodles 😂🤣 I have some stories like that 2! 😂🤣 Have a great day Mel!

Lordy Rachel I don't know how you stood it! It is just too Dang hot, I'm ready for fall. Yes I really wanted to like that Mexican street corn. Everybody has been bragging on it but I just did not like those flavors together on my corn. I'm sticking to sweet corn. And my husband liked it but then he didn't like the stove top stuff that I liked. We just had a mixed up week it happens lol Hope you have a great week and stay cool 🥰

We sweated a lot!!! LOL We didn’t use our stove at all and keep all our lights out and had lots of fans 🤣 I finally broke and we went and got the window unit, we were all in the living room! 🤣😂 I pray for anyone that doesn’t have air. I like sweet corn 🌽😊

Hey Mel loved the Mexican pizzas need to make that..all the recipes looked good..the weather here has been in the 90 too but humidity well into 108 was the highest I stay inside my MS does not like heat..stay cool and your husband stay safe and cool

As always, enjoyed video. I wonder if you've thought of doing a plate or two for shut ins, if they live close by. I did home health care and I had a few that all I did was basically tend to them and cook them meals for weekend or till the next day leaving basic microwave instructions is what I did alot of Monday thru Saturday, and one Sunday. Alot of treasured times of great memories, tricks and recipes shared during my time with them all. I'll have to try your street corn, and yes I had one client who added mayo to alot of things (great way to grease a pan or coat taters). So I lol when you mentioned that about your dad and grandmother. As I watched and cared for many who believed in not wasting anything but found alternatives to the term penny pinchin. Hope some of these ideas helps you out. Will have to try that casserole of hamburger helper, thank you for great base idea. I'm gonna add cream of mushrooms celery something to it- one of those tricks I was taught during a time of making a veg soup. Idk if I'll do it homemade or from a can, time will tell. I can let you know though if you'd like. My husband is the meat and 3 type not big on pasta likes goo-losh so I'll just southern it up maybe instead of the usual Mexican flavor or with them. And I am a food sharing girl too, I've had two ladies in my church that have had surgery and I've taken food to last week. We also make a meal once a month at church and take to our shut ins and those that are sick. I had the complete set of temptations in cranberry and gave them all the way when I moved because I purchased new things for my first freestanding home I would own. My closing was this past March and I moved in in April and now I am broke for a couple of months! :-)

I just discovered your channel & I love it, you sound so much like me, I too am a huge cheap skate, (ALWAYS have been too, will be for live LOL), but I love using generic stuff when I can, some things hubby will not eat unless its the name brand. But I wanted to Thank You so much for more cheap easy meal recipes. I wanted to pass on 2 easy meals we do here ( I started doing this when our son was maybe 10, & he'll be 25 on 4/23. But if you all like bbq pizza, I get cheesy frozen pizza when on sale & top it with those Llyods BBQ small tubs of either bbq chicken, beef, or pork, & put some of that on top the pizza & bake like normal. And the other is we do meatball subs, but we do the frozen meatballs nuke those & drain if they have oils afterwards drain them, & use your fav pasta sauce & mozz cheese BUT we put it in a hot dog bun. And, Chicken Cacciatore cook up 1 pound of chicken into chunks (cook with the peppers & onions), make sure to use olive oil with cooking chicken, cook up some penne noddles, use what ever pasta sauce you want, chop up a mixture of bell peppers, & onions (you can add mushrooms if you) & when chicken & peppers are done and your noodles are all boiled & drained, mix ALL will, top with parmesan cheese & moz cheese too. (we always make extra of this to freeze for other meals.

Cotija cheese is available at Walmart you can also substitute out queso fresco and in a real pinch feta but it's not the same it's much saltier.

My lasagnas never come out the pan in a square one piece and I never care lol! It is just so delicious. Also- Swaggerty’s sausage aint good!!! I buy Jimmy Dean and Bass Farms. Those two are so good. Cannot beat ‘em! I have a hubby and two daughters like u. My girls are 22 and about to be 19. We live in eastern North Carolina. Love your channel. Love your voice. It is so comforting to me. Great video. I found it very interesting that your husband is a lineman, mine is a construction worker. Your daddy didn't like those convenient quick foods like spaghetti or lasagna or taco, etc. My mom called all of that junk food including hamburgers and hotdogs. Also you said your dad was a painter in his off days from the fire department. Painting houses and hanging wallpaper are how my daddy made his living all the time except for winter. Then he usually did some kind of sales work. Wow! This is so weird. Or maybe I'm just weird. Lol
