Irish Soda Bread Recipe
1 1/3 C. All Purpose Flour
2/3 C. Whole Wheat Flour
2 tbsp Firmly Packed Light Brown Sugar
1 tsp Baking Powder
1 tsp Caraway Seeds(optional)
1/2 tsp Baking Soda
1/4 tsp Salt
3 tbsp Butter
2 Large Egg Whites
3/4 C. Buttermilk or Sour Milk
1/3 C. Currants
1 1/2 tsp Grated Orange Rind
Preheat oven to 375°
In a large bowl, combine the first 7 ingredients.
Use a pastry knife or 2 knives, cut in the butter until the mixture looks like coarse crumbs.
Combine egg whites, buttermilk(sour milk), currants, and orange rind in a med bowl.
Add the buttermilk mixture to the flour and stir until a soft dough forms.
Knead on a lightly floured surface for about 30 seconds. Shape into a 6 in round form.
Place on a greased cookie sheet.
With a sharp knife, make a crisscross slash on top of Loaf. An X on top of the loaf.
Brush the Loaf with some extra buttermilk.
Bake for 30 minutes or until the bread is golden.
Transfer to the cooling rack to finish cooling.
