Pasta Amatriciana is one of the four classic Roman dishes. Like Carbonara and Alla Gricia, Bucatini Amatriciana uses the ingredient known as guanciale along with Pecorino Romano cheese. This whole recipe can be made in under 30 minutes. It's a super simple spicy tomato sauce with only 6 ingredients. I hope you enjoy this classic Bucatini all' Amatriciana recipe!
Ingredients:
-1 pound bucatini or pasta of choice
-6 ounces guanciale can substitute bacon/pancetta
-1/4 cup grated Pecorino Romano - plus more for serving
-2 ounces dry white wine
-1 28 ounce can San Marzano plum tomatoes
-1/2 teaspoon chili flakes
-coarse black pepper to taste
-salt to taste

I’ve made this for years I never knew what to call it. My great grandmother used to make it! She was French/Acadian (cajun). My mind is blown!

We had this dish in Switzerland a week ago and I’ve been dreaming about it since. My daughter is the fussiest eater ever and she cleared MY plate. I had to order a second plate. So… now that I’m back in the states I’m going to try to make it. Thank you for the recipe and instructions.

I love your channel mostly because we cook exactly alike. Your recipes are pretty much as authentic as they come and the ingredients you use are always spot on. I take pride as you seem to do with keeping the recipes true to the original with no variance to the "Americanized" versions. I look forward to more vids. Thanks.

Besides Carbonara, this is my FAVORITE Italian dish!!! When I first made it many years ago, the recipe I used included onions and only later when I read a story about the town after the earthquake did I see that in the "official" recipe, onions are not used. I make it both ways now, my friend likes the onion version because that is the original recipe that I used the first few times that I made it. I love it either way!!!

This looks great. I’ve watched a bunch of Italian cooks make this and absolutely the only difference I see is that they mostly cook the pork more gently, not crispy.

Made this tonight for first time and it was fabulous! Here in St. Thomas, VI I had no chance for Guanciale but replaced with pancetta. Also, didn’t want to open a bottle of white wine so I substituted 2oz of a fine Cabernet we had open from other night. Otherwise, I “stuck to the code”! Have also made r the spicy sausage ragu and working up to,make Sunday Gravy. Love your videos! Outstanding! 👏🏽👏🏽👏🏽 Richard in the USVI! 🌴

OMG. I made this tonight and it was so frigging good. I used Pancetta instead of the other meat and I only had white zinfandel wine but it all worked out. My son and I thought it was fantastic. Better than a restaurant. Easy to make too.

Your recipes are so good! Every time I learn a new Italian dish I make sure I check how it is made on this channel. This pasta is so good. Made it today. Unfortunately did not have bucatini. Linguini worked good though. I doubted if I should add garlic or not! Decided to try without! Lol!

I made this for the second time today and it's pretty good. I use pancetta instead of bacon. My oldest boy it the only one in my family (wife & 3 kids) that enjoys these Roman dishes with me and since amatriciana seems to get better in the fridge, I'll have enough leftovers for lunch for the next couple of days. Next on my list is carbonara.

I found this recipe on the internet on another site I couldn't find guanciale so I started using salt pork and it really flavors at nice

Another wonderful dish. Although this flavor profile is a bit trickier than the alla gricia, where the guanciale is front and center. Here, the chunks of pork themselves seem to get a bit lost in the spicy tomato sauce. But after simmering it long enough, you can definitely taste its influence on the sauce itself -- almost like a Sunday gravy. And once you get there, you just want more.

Jim, this is wonderful. Now if you would, can you demonstrate a recipe using Puglia-style cassareccia. I was thinking maybe with fresh ricotta. I went to my Italian grocer (we have 2 here: Ferrara and Liuzzi) and I went on a wild shopping spree with all the products made in Italy and freshly made cheeses.

That looks awesome!!!! I will definitely try this sauce. I found a recipe (carmelized onions and anchovies) that used bucatini and it was the first time I'd heard of it. It intrigued me. I'm a pasta fanatic - using the right pasta in a dish always makes a dish better. Well anyway, I could NOT find bucatini. On line it was like $7.00+ a pound! Until I went to a specialty grocery store, so I bought 6 pounds ($2.50) to keep in my pantry! Thanks for all your great content!

This is the most perfect Amatriciana recipe I could find. What do you think of cooking with an onion and a clove of garlic as well?

Thanks very much! I am totally fine with onion, garlic, or whatever you want. You must put in what you like. In Italy, they get upset over the use of onion and garlic in Amatriciana, but it's your food not theirs😂

I'm in one of those places where you can't find pancetta let alone guanciale. I would suggest substituting "salt pork" instead of bacon. Can usually find salt pork. For me I don't want anything smoked substituted for pancetta. I'm thinking of trying to cure my own but haven't given it a try yet.

Restaurant I worked at made it with pancetta, everything else was the same accept they added butter at the very end. Never had it before but instantly became my favorite. Unfortunately wife doesn’t like panchetta 🙄

Since no one in my family is from Rome, this is one of the dishes I choose to do my own variation. Enough so that you probably can't call it pasta Amatriciana but it's still very good. First...garlic. Not a lot. Just one clove slice. Crushed red pepper. Not to make it very spicy, but to add a layer of flavor. And lastly, a bit of chopped rosemary. I just feel this particular dish needs a bit more punch. I know the purists will say it's not pasta Amatriciana but they're correct and I'm okay with that. You suggest American bacon and I know why, but it has a wholly different flavor profile than pancetta or guanciale, so I have no problem confessing my sins here. So, if you ever have a bit of guanciale or pancetta laying around that you have to use, give it a try.

Big Fan, love your videos but I seen the Guanciale skin trimmed off the seasoning before cooking in other Italian videos, what are your thoughts ? obviously you didn't trim yours

If someone is apprehensive about using eggs in the carbonara recipe for fear of salmonella they can use pasteurized eggs that are free from salmonella because of the pasteurization process.

I will be disappointed if my town's most popular Italian Deli doesn't have guanciale, they brag about having the best selection of Italian meats in the valley.

If you can't find Guanciale DON"T USE Panchetta If you can't find Panchetta DEFINITELY DON'T USE bacon!

I understand "fat = flavour" and all, but man, I'd drain off at least some of that huge pool of pork fat. I'd rather just drain it off and use EVO if I needed more fat.

Made this recipe to the T for the first time today with Guanciale instead of bacon, and it was amazing 🤌 lol To describe the Guanciale in a different perspective, when you get it all fried up, it’s more along the lines of chicharron than bacon, pleasant surprise 🔥🔥
