We spent three weeks in Japan shortly after it reopened to tourists in October 2022 and this is a vlog of our first time visiting Tokyo, including taking the Shinkansen train from Kyoto. We visit the teamLab Planets exhibition, taste some very disappointing tempura, drink coffee with robots, and try shabu shabu!

The restaurant you went is Nihonbashi Tendon Kaneko-Hannosuke. Tendon is served with seasoning sauce over tempura, so it is not supposed to be crispy. If you would like to eat hot crunchy tempura, I recommend you to go Nihonbashi Tenpura-meshi Kaneko Hannosuke. Tempra chef makes tempra in front of customers.

Ah, I see! I knew there must be something we were missing. But it wasn’t even hot. Soggy OR luke warm I could have handled…but both? Maybe just not my thing.

Also, the steam from the cooked rice gives the tempura batter a sticky texture.

Traditionally, tempura used for tendon (tempura on rice bowl) is deep fried with thick batter and dipped generously in sweeter and thicker sauce before it placed on a bowl of rice so that the sauce washes out a bit of oil for lighter taste, hence its not crispy. That’s authentic ‘Edo’ style. On the other hand, the crispy tempura you mentioned is tempura that is deep fried in the lighter batter served separately, and you dip light sauce or salt.

I didn’t realize tendon wasn’t just tempura on rice but many folks have pointed this out! I’m happy to learn!

You better go to Tenpura (not Tendon) restaurant if you want to taste tenpura that you expected. Tenpura of tendon serves with sauce so it's not so crispy and hot.

Ah! I see! The Japanese place we ate it in Korea must have been different because it was still called tendon but was very crispy and hot. 🤷🏻‍♀️ I preferred it.

I can’t hardly wait for Team Lab Planet!!! It looks amazing! Ok that tempura dinner even disappointed me! After waiting in line for an hour, I would expect a great meal. 😕

It’s such a cool experience! You’ll love it! And the tempura situation just made me realize how infrequently we have a bad meal (especially in Japan!) Always grateful. 😁

Omg, when Hays said ‘Tokyo’, it was almost as if he didn’t have a baby accent! When my friend and I talk about food, we often say ‘it was good, but not revelatory.’ So when you said the soft boiled egg was a revelation, I was like oh! Someone else talks like us! Lol. That sensory museum looks like an amazing experience!

In regards to that tempura place, it has been famous for years and I went around 7 years ago? On a date lol I remember it being okay. Lol just very busy and at the time you sit with strangers in order to reduce lines… Tendonya Tempura (chain restaurant) is good too… lol 😂

The shop does not dip their tempura (some shop does. It's different styles). They add the sauce on top when plating. It should not have cold down and soggy the tempura unless it's been on hold a bit after frying? And the shop is a crispy style tendon shop. So being soggy is not on purpose. There are shops serve crispy style tendon. And shops serve soggy style tendon, which dip them and have them soggy on purpose. But the shop you went to is not a soggy style shop. Their owner promotes that his tendon is crispy. And there are mixed reviews on them, some says their tempura is crispy, some says it is soggy. That said. For you to know, there are indeed many soaked and soggy style fried food in Japan. Sometime it is done purposely. For example, one style of Katsudon is served with tonkatsu that had been soaked or boiled in sauce and egg, such Katsudon will be soggy for sure. Also there are udon shops that serve tempura in soup udon. Which make the tempura totally soggy in the soup. In these cases it is done on purpose. 😉 I think both styles has its charm.

This makes sense! It didn’t seem like they were dipped. On top seems more likely but even still, they were not warm! I am not yet so into the soggy fried things- I love tempura with udon but always move it to the side quickly so it retains some crunch! 🙃 Thanks for watching and for the thoughtful explanation.

I think you’d prefer freshly deep fried tempura. You guys had ten-don (tempura donbiri), which is covered in sauce and over rice. It’s different.. I also prefer tempura. 😋😋

That is not precisely tempura per se. (it is "ten don", which is tempura donburi.). Those thingies (humongous shrimp!) were dipped in a broth/sauce, and that is why they are not crispy.

Ah! I didn't realize it was dipped! We've had it before but I guess without sauce? Maybe not authentic. For me, it defeats the purpose but I'm glad to understand it now. Thank you!
