I just recently came across your channel, and I just expected an Italian guy to get upset at every online recipe (which is understandable tho). But I love that even in the bad recipes you still call out the right things they do. Just 20 minutes of straight ranting would be a lot, but putting in the right steps makes it way better to understand and a joy to watch!

Vincenzo, My Sicilian heart ACHES when I see people ruining arancine. It’s so hurtful because they don’t know and they don’t CARE to learn. It’s ok to not know something, but it’s not ok to teach from a position of authority if you don’t know wtf you’re talking about. I am so grateful for your videos, especially ones like this. Dissemination of TRUE Italian food knowledge makes my spirit soar. Grazie, il mio fratello.

I even hate it if someone names his shop in an Italian name but isn't italian and serving 'italian' food but in their way. Name your shop in your language if u can't cook italian the way it should be otherwise im feeling lied to

Thank you Vincenzo for teaching me what is real Italian food. Sadly, I had been eating croquettes as arancini:-( I now know what real arancini look like:-) Also, I loved your carbonara video, and sadly not able to find any restaurant in NYC that serves carbonara with guanciale. I look forward to visiting Italy one day and try your food.

Love how he stays critical on keeping Italian recipes TRADITIONAL. No need to alter recipes that have been handed down from generation to generation and are already so delicious...less is more 👍

Except Italian Americans are literally the ones who have altered these recipes based on what they had at their disposal lol, so it’s your own heritage who’s to blame for it 🤷‍♂️ Italian Americans do NOT cook the same way Sicilians and Italians cook back home, and even immigrant Sicilian and Italians cook differently when they get here because not everything is available to them, like I said. That gets passed down to their children as a way of doing things based on restrictions while still channeling the spirit of the homeland and culture. It’s really not a big deal lol.

I'm from Malta and I'm looking forward to make the proper arancini Vincenzi style...;although the asian fusion croquettes did look interesting! Vincenzo... Can i use cacio cavallo instead of mozzarella? Would it be acceptable?

100% correct sir!!!! My mom made them, I haven’t made them yet but I will soon. She passed in August so now I have even more reason. I learned a lot from her.from being 100% Sicilian. Yes, my last name has been changed a long time ago( I won’t get into that) Absolutely love your channel❤️❤️

Vincenzo you should do a video of making a "Classic" American cheeseburgers but instead make your own version and just cook a completely different dish but still call it a classic American cheese burger. I wonder how many people that would piss off XD.

First of all congrats on the birth of your beautiful son, enjoy. I love arancini but mum only makes suppli because we're from Rome and she thinks nobody cooks as well as a Roman! Every Italian restaurant we go to in Sydney she has to critic the food.

The deal is that if everyones, even Ramsay, said at the start "this is MY version of (put famous italian dish here), we would not be so triggered. I love it when you take on these famous chefs for their blunders in the kitchen. I love Gennaro's cooking too and he's mostly been my inspiration to start in the kitchen. Still, an arancini is an arancini and not a croquette. Food origins are important. Keep them coming!

My mother born in 1935 in Catania made these. (I commented on your arancini video. She made this much like your recipe. I stated she formed it as a triangle to represent a Christmas tree.) What I never said was the fact she used long grain rice. Arborio rice is easy to find in Chicago. It was however cost prohibitive. Some compromise had to be made when we arrived in the USA and work with a lower middle class income. I’m very proud of her. She got it done. GREAT MEMORIES.

Am from Malta and arancini are very popular in Malta but we also use long grain rice and they come quite nice but arborio is the way to go as the taste and consistency is much better

@@patrick3178 I do not disagree with you on that. Is arborio more expensive in Malta than the long grain variety? As I stated earlier it had to do with the cost. Honestly my mother would've prefered arborio.

@@nomobties in general arborio is the cheapest type out of all the risotto rice but compared to long grain is more expensive and I guess it's the same everywhere, but long grain rice if you cook it right it comes very good I mean that is how I grew up eating them with long grain rice, only since I became a chef I started to use arborio. I also left Malta.

100% understand about the price of Arborio. Here in Costa Rica, long grain rice is the standard item, which is approximately $1.20 per kilo. Arborio on the other hand is a whopping $10.40 per kilo!!! Thus risotto is definitely a special occasion dish in my house.

I tried arancini for the first time last year. It is now one of my favourite things to make. After watching this video it's made me realise that I am making them correctly thankfully :D my only change is I have to make them gluten free for my husband.

I just want to say please keep going. I am from indonesia and i sell food & i like making food for my family. I really like the fact that i got education you about food. I always do the carbonara, or aglio olio, or bolognese wrong. And i am so happy that i learn fact & knowledge fromthis channel. Other channel always give up step by step, yes we can follow the steps and make good food, but why? Why we do this why we do that they never explain. Thats why we can only follow but we cant learn. I watched all your videos in 4 days and i learn a lot like i never before. Please keep going. I really thankful i found your chanel. I just watched this, then your recipe video. I'm back to say thank you for sharing the authentic version for us to make. It looks much easier than making risotto. I definitely want to give these a try!! Also...Sebastian is adorable! 😍 My son is almost 16 months now, but I haven't held him since he was 2 months (he and the rest of my family live in another country and I haven't been able to visit because of Covid)...seeing you holding Sebastian was heartwarming.

Love this video! I make arancini, lasagna and cannoli for the family to make sure I keep my Nonna’s traditions alive. Very proud Sicilian passing down these traditions to my daughters too. Next on my list are pizzelle but I just need to iron to do those.

Not sure which I prefer, your recipes or these reaction videos 😂 But I agree, calling something by a name that it isn't, specifically in front of millions of people, is just misleading. No credit given to the origins and the true recipe... If it's at home or whatever then fine , call it whatever you want. That being said, I make a pretty good fake amatriciana 😅 Keep them coming Vincenzo! Buongiorno signore!

Completely agreed. There is no respect and there is no love. Some of these chefs I understand are trying to be creative but there food is steeped in tradition and some things you need to leave alone and show the respect it deserves.

Like some of these foods have legitimately saved poor families from starvation and to take something so precious to your culture and mangle it is like spitting on history and all places have this historical food, so all people should understand.

Great work Vincenzo. So many of these fraudulent people need to be called out. You have my ultimate respect. You are respectful in your commentary. I feel embarrassed that I have been sucked in a little by them, but I have for many years now seen the ‘shallow Hal’ performance. I just didn’t realise their recipes were so off point. Thankyou so much for your diligence., and congratulations to you and your family on the birth of your beautiful baby, Sebastian. He looks just gorgeous and I love how you are resting him on your chest and caressing him.

Vincenzo first congrats on the new addition to your family :) I am so happy for you and Susan :). Next want to say you are so right if you want to cook something right whatever you want to eat from whatever country learn a bit of the culture fist see how they make it first then make it the way they do it do not guess at it. America and Canada people have changed things so much threw the years to make their own version so much they lost the history to why it is made and how it is made. I am Scottish I love Vincenzo and his wife Susan both wonderful people and Vincenzo has a great Grandma and mother that cooks he had great people to learn how to cook things behind him so there is no one I would listen to except Vincenzo when it comes to Italian foods there is no one that can cook it better. Yes, I have more than tried Vincenzo's recipes every one of them is really good the food he shows you how to make it will melt in your mouth of flavor.

@@vincenzosplate I am only saying the truth your recipes are I am also finding that so many recipes that were passed down threw the years were really good ones and been getting back to the old ways of cooking. I am doing a lot more research on different cultures and learning the traditional ways of things not just mine but all of them. I was brought up to cook things the right way or not, it is all about flavor and spices is not an end all be all for cooking. Some times natural tase is best especially for veggies not all veggies need spices :)

One of the best country to eat that my wife and I visited so far was Italy. So many great food and rich history. People were always friendly and passionate about food. The only thing that was annoying were the street scammers with the bracelets etc Hoping to visit again one day. Thanks for sharing your passion. Somebody has to stand up for REAL Italian food.

Good afternoon vincenzo. i recently came across your channel and love it. I did not know you were in Australia and would love to meet you and share some food with you.I love how the italians do things the correct way and the rest of the world ruins proper italian recipes. When i was younger i had italian friends and had dinner at their places regularly because the food was fresh and done the correct way wish i miss these days.And their nonna and madre kept making me eat even when i could eat no more .
