It’s the omelette you get in good cafes in Paris. It is very difficult to cook! He makes it look super easy but in fact it is very tricky.

That omelet looks very tasty. But I appreciate what you said about it being not necessarily better than an American diner omelet, just a different style. It kind of wears on me after a while hearing that everything I do and love is inferior to someone else’s version.

The fork was only whipping the eggs, the scraping noise was from the pan scraping across the stovetop.
