I believe Today's Gourmet is the best programme I've ever seen on French home cooking. Every new video I watch I think: 'yep, my gran used to do it like that as well.' Except with better techniques and pedagogy thanks to his professional training. Genuine public service.

Every time I watch this man cook something, he has at least 1 tip I've never heard before. And this chicken is amazing, I cooked his new version off his cooking at home channel and it's by far the best chicken you can make.

My Godfather was French, and he taught me that real French food isn’t elaborate and doesn’t require anything too fancy. It’s about bringing out the essence of simple, wholesome food from the local area. He used to make boiled baby potatoes as an appetizer. That was it, just small yellow potatoes, perfectly boiled, with a sprinkle of salt. And they were delicious. Green beans with lemon and butter. Really fresh bread. Deceptively simple food, made from the freshest ingredients you can get. It all starts with the ingredients. And always use fresh herbs whenever possible! My Godfather used to call dried American spices different colors of dyed sawdust lol 😂

I started watching these programmes as a boy, and love them! I was on a walking trip in Germany recently, where we were supplied suitable frying pans for breakfast in one of the Hotels, with which to fry an egg. I remembered the technique for omelette, which I learned from Pepin… Result! I had to do several more for some of the other Hotel guests! A great cook, and a great teacher…….

I haven't made roasted chicken in awhile. I like the technique of pre searing before roasting, that must give it a nice crispy skin. I also love the cheese pasta shells as a side dish and of course I love the crepes. Thank you chef!

I wish that Jacques Pepin would have competed on Iron Chef Japan back in the 90s he could have taken on Iron Chef French Hiroyuki Sakai.

I adore Jacques! I always thought he should say his classic saying at the end of all his shows "Happy Cooking" in French. Certainly when his daughter and granddaughter join him, the girls should end the show by saying "Happy Cooking" in French.

Simply one of the best ever, my father was a chef my mom an excellent cook, when I was young this was one of my favorite shows. That being said I became pretty proficient in the kitchen.😂. I also need to send some love to “Julia”😉

These are simple yet fulfilling recipes for a meal. Naturally one can add things to make it even better. Poultry seasoning to the chicken, whole wheat pasta instead of white. Some steamed broccoli and carrots instead of the salad with perhaps a sauce of some kind. The crepes can be boozed up ( kirsch, cognac, amaretto or any liqueur) sugared and then a flambé. It is rather endless the possibilities.

As a Northern Irish native, I am distraught to learn that Chef Jacques sends the very darkest leek leaves to the stock pot. My Grandad grew all his own veg, and maintained (rightly so) that the darkest green leaves gives us the richest Iron, B12 and Folic Acid yield....Use and eat your dark green veg, please ❤

There was a video where Jacques roasted an a chicken from A to Z, including trusting, placing in pan with butter and showing precisely how it is turned on each side after 20 mins. Does anyone know where I can see that video or can someone please re- upload it? Tks

LOL, he say "You have to clean up your hands", but he just does a quick 2 second rinse, no soap, and a quick wipe with the same towel he uses for everything. LOL, ya, I'm sure that rinse removed any Salmonella that might have been there.

His version of sanitizing his hands & the surfaces was ridiculously bad. He mentioned salmonella but then didn’t use soap on his hands or the surfaces-& then touched the cheese-No!!!!
