Of all ethnic cuisines, Jamaican food is my all time favourite! From when my cousin came to stay with us in NYC from Kingston in 1971, to the 8 years I lived in Brooklyn, it's my favourite food. Too bad my lady is a vegan as she doesn't know what she's missing. The ONLY time that I've eaten meat (poultry, pork, mutton, goat and oxtails) since 2015 was the two times I went to Jamaica in 2019 and 2020 as I said to myself that I was going to eat real Jamaican food while in Jamaica which included those meats. As soon as I got home and returned to a vegetarian diet, I quickly lost the weight that I gained while in Jamaica. I love that country, its people, its culture and of course, its FOOD!! See you soon Jamaica!

@@missdigioia I JUST introduced her yesterday to my friend that I go to Jamaica with with he and his kids. He was like, "you know where she needs to go?" I said "hell yeah man, to Jamaica with us and the gang (his kids)!" I need to get my son to go too. We've got friends down there and one of them manages a restaurant and will scout out vegetarian and vegan places for us (I'm back on the band wagon and out of respect, wouldn't eat meat in her presence even though it doesn't bother her). Most Rastafarians are vegetarian as I understand it, so it shouldn't be a problem finding a Rastafarian restaurant in or near Montego or up in the country where we stay. Thanks so much. I LOVE JAMAICA ❤❤❤❤❤💖💖💝💝💯💯💯💯👌🏾👌🏾👏🏾👏🏾👊🏾👊🏾👍🏾👍🏾👍🏾👍🏾!!!!!!!!!!

I thought I was a pit master out here in California ( Mexican American ) and then one year a new family move to our town from the military and began to attend a black church my family and i had attended for a little over a decade and as soon as we met we had a kindred spirit ( we both loved good soul food from all over the world) we would trade dishes and savor some delicious meals together, than one day he wanted to grade my BBQ level and what I thought was a B+ ended up being A+ on flavor and C- on smoking profile ! .......I WAS SHOCKED ! just cause used charcoal briketts knocked me down a whole grade ! [ strictly hard wood coals .....from freshly burned wood ! ] He smoked all his meat with the Texas off set method.......( he like a clear blue smoke.....fully oxygenated ) all protein away from the coals ...... He like to taste the seasoning, meat, smoke individually, and he used an old propane tank with its really thick build to absorb all the heat and radiate like a convection oven ( cooks a little bit faster ) he ended up opening a catering restaurant out here in California and One day my best friend went over and tasted his BBQ and asked him if he ever tasted the BBQ of a Mexican American dude with my name and he said " yeah " knowing him that hit him where it hurts......but little did he know, i owed all my game to him and prided myself in being took under the wing of a master and refined my skills by his totalage .......now i cringe when at a party i see people BBQ 'n erroneously! I've been known to take over, cause ain't nothing worse than burnt raw chicken, ribs . Eventually after serving in the same church auxiliary, my family and i were called on by providence and moved on, but I'll never forget those lessons . MAY THE FATHER BLESS YOU ALL IN THE NAME OF YESHUA......SHALOM !

Thanks for relaying the story of the history of jerk. I hate when people refer to it as Caribbean food because it's a Jamaican invention. They wouldn't call pasta European, no it's called Italian food. We really need to put some protection on jerk.

5 lb, that's all??? I should be so lucky! I was there last year and gained 12 lbs! I was just there in January and behaved myself and only gained 8 lbs. Anyone who goes hungry in Jamaica is by choice as there's food EVERYWHERE! That country is amazingly awesome and beautiful. I can't wait to go back!

What is the technique to keep the cooking heat if the food is on there for hours? Do you keep replacing the charcoal every 45 mins or so?
