Japan's #1 oyster is widely considered a Matsushima Bay oyster! Today I'm going straight to the source. Book your own unique Japanese food experience with By Food : www.byfood.com/experiences/ma...
Matsushima is so famous for their oysters that it's become the spot for all-you-can-eat steamed oysters at oyster shacks that line the bay. Historical artifacts dating thousands of years ago suggest that people here in Matsushima Japan enjoyed fresh and delicious oysters from the waters of Matsushima Bay.

Fascinating. It’s very labour intensive. I live over the road from an oyster farm in NS but they buy them tiny in a net bag and just grow them up. Canada and the rest of the world could learn so much from the Japanese. Such a pride in ether do.

My rough guess is I've tried about 30 species of oyster. My favorite, hands down is the Kumamoto Oysters. They are small but pack a ton of buttery goodness. My dream is to one day breaking my record of 50 in one sitting that was my 50th birthday gift. They're small and harvested only about 20 minutes before I started eating but. I have never had better and have eaten countless. Fortunately, I live in the Pacific N.W. on S. Puget Sound. Harvested by my 1st. cousin that worked for Taylor United Seafood.

When I turned 50, I went to Maine to eat 50 varieties of oysters. I ate 15 dozen raw oysters and 49 varieties in the two weeks I was there. I miscounted, so I stopped at 49. Lol but the very next year I returned for three weeks. I ate 25 more varieties and 14 dozen. 😉 from Alabama/Asheville, NC.
