I want to share a Japanese fried rice recipe with you in this video.
If you are looking for an easy and tasty meal, you are in the right place.
Simple ingredients, quick and easy cooking technique, and is delicious upon delicious.
The secret of preparing Japanese garlic fried rice is the perfect timing and temperature to fry the garlic.
Let me get into the details right in.

Recipe

Ingredients
450g short-grain rice, cooked a day ahead
5 cloves garlic, coarsely chopped
2 tbsp vegetable oil
2 large eggs, beaten
1 large stalk of scallion, cut into small rings
1/2 tsp salt
1 tsp Japanese soy sauce
1 tsp mirin
1 tsp sake
Sesame oil and ground pepper (optional)
Method:
Fry the garlic::
- Add enough oil to submerge all the garlic in a pan.
- Fry the garlic over low heat. Stir continuously to ensure even browning.
- When the garlic becomes slightly fall short of golden, pour the garlic and oil through a wire mesh strainer.
Fry the rice:
- Heat a large ladle of garlic oil (from frying the garlic) in the wok.
- Pour two beaten eggs into the wok over medium heat. When the egg starts to thicken, break up the egg into pieces with the spatula.
- Pour the cooked rice into the wok while the eggs are not yet fully solidified. Break up any lumps of rice with the wok spatula.
- Season the rice with salt, light soy sauce, mirin, and sake.
- When the rice is getting dryer, add the fried garlic and scallion.
- Stir-fry the rice over high heat for half a minute.
- Remove the rice immediately and serve.

Short grain rice and Jasmine rice can be used for fried rice. Use Japanese short-grain rice will make it more authentic.

KP this is great! Thanks.. question - why not just add in the rice once the garlic has reached the desired browning? Then move the rice to a pot, fry the eggs then add back in the rice again.

The reason I fried the garlic separately is that I use more oil than required for frying the rice. That extra oil is necessary to submerge the garlic for even browning. If I use less oil, the garlic is not perfectly fried. Since there is excess oil, I need to remove it first. Otherwise, the fried rice will be too oily.

I live in Malaysia, and it is available at any kitchenware store. I am not sure about other places, but cast iron wok is available online, such as Amazon.com.

It's optional so it can be omitted.

If you are muslim, you can get halal mirin. As for sake, just omit it

Some recipe don't remove the garlic and simply add the rice in immediately. Wondering what would be the difference? Would the garlic become overcooked?

If you saute the garlic until aromatic but not fry until golden, you don't need to remove the garlic. In this case, it is deep-fried until crispy, so I remove it first.
