I had once beef tepanyaki in Japan, but they actually grilled the garlic in the beef fat (the one when cooking) and the extra fat that was cut previously was used to fry the rice instead of not using it directly

I believe that is the more common technique with the rice. Use the left over trimmings.

Out of all the Japanese Wagyu Teppanyaki chef videos I've watched (and there are many) this chef and restaurant are in the top two or three. His economy of movement and precision are remarkable. I love that he saved most of the oil he used to cook the garlic. The wasabi is beautiful, the soup looks tremendous and everything is expertly done. And there's no artificial clacking and banging around of the utensils - watching him is like seeing a ballet not listening to a car crusher. It's very relaxing and the food looks incredible. Of course, for the price it should be, but in several videos, the preparation is nowhere near as expert despite being more expensive. He earns the money with the skill and the experience. Yes, it's luxury food and commands a high price, but people go to restaurants like this at least 1/2 for the experience and this guy's a winner. The portions are reasonable here also. Not gluttonous, but not too small either. It won't satisfy people who like 24 ounce porterhouse steaks, but it's not meant to. And here in 2022, a 24 ounce porterhouse from a good beef company ain't cheap either - more like $70 before cooking.

I've had it once, and it was amazing. Too pricy though, a friend did it sous vide and it came out great, but the thing cost like 300 euros. And it gave me heartburn like crazy.

Can not be 6900yen, I bought this level beef, only this size beef is over 100 dollar. If you add salary of employee and restaurant, need to be 200 dollars.

Nasif Mannan non of the above. It's just an excuse to make small portions of food x10 times more expensive. It's not efficient to cook meals this way, one part of the meal at a time, no multi tasking. It's not possible with bigger portions, so they all make it booking in advance. Cooking in front of the customer to make them feel like this meal is worth the price they are paying.

Just an incredible culinary experience. We ate this (not at the same resto) when we were in Japan and it was honestly life changing. Hard to describe the texture, flavour, aroma etc. Beautiful video!
