■ Ingredients
Sponge cake (Genoise)
60g Whole egg
35g Sugar
45g Soft flour
10g Unsalted Butter
20g Milk
Syrup
25ml water
20g Sugar
5ml Cherry liquor
Whipped cream
200ml Heavy cream
15g Sugar
Strawberry
■ Directions
Preparation
・Warm butter and milk in a water bath to melt the butter. Keep warm at 50 ° C as it is.
・Put oven paper on the mold.
・Preheat the oven to 180 ° C.
Make a sponge
1. Put the eggs and sugar in a bowl and mix with a hand mixer beater until the sugar is familiar.
2. Whisk at high speed with a hand mixer. Whisk firmly enough to hang the ribbon.
3. Mix at low speed with a hand mixer for about 1 minute to adjust the texture.
4. Sift the cake flour and mix gently so that it returns from the bottom.
5. Put butter and milk on a rubber spatula and mix well.
6. Bake in an oven preheated to 180 ° C for 15 minutes. Continue to lower to 160 ° C and bake for 10 minutes.
7. When it is baked, remove it from the mold and let it cool with the paper still attached.
8. When the heat is removed, put it in a bag and cool it in the refrigerator for at least 1 hour.
Finish
1. Slice two sponges into 1.5 cm pieces.
2. Slice the strawberries between them.
3. Put water and sugar in a small pan and bring to a boil. When it cools, add kirsch.
4. Whip the whipped cream smoothly. Whisk the part between them firmly.
5. Place the sponge on the turntable and apply the syrup with a brush.
6. Apply whipped cream, place strawberries and cover with whipped cream from above.
7. Apply syrup to the back of the second sponge and layer it on the cake. Apply syrup to the table as well.
8. Place whipped cream on the sponge and undercoat. Apply whipped cream to the sides little by little.
9. Apply the whipped cream cleanly a second time.
10. Decorate and chill in the refrigerator for at least 2 hours to complete!
