Has to do with being able to see freshness. You can tell how fresh a fish is or how well it was taken care of after being caught by how red the the gills are and how clear the eyes are. If seafood has a strong smell, pale gills or cloudy eyes, its not fresh/wasnt packed well.

@@aIopan I think they are native to waters just south of Japan so not a big deal. They are infested in the Atlantic because there are no natural predators and the local fishes don't recognize them as predators. A lionfish has only one natural predator and that is orientals. We need to introduce a breeding population of asians to Florida, problem solved. For some reason whites, blacks and mexicans aren't that interested in catching and eating them. Same deal with the Asian carp problem. Relocate a million asians to the banks of the Illionois and Missisipi Rivers. Solved.

@@iplaypokemongoeveryday8508 Tetrodoxin, the predominant toxin of pufferfish venom, has an LD50 (lethal dose) in mice of .334 μg per g mouse weight. Cardioleputin, one of the three main toxins of stonefish venom, admittedly this is weaker than the verrucotoxin of stonefish, with an LD50 of 15μg/g. However the other main toxins in stonefish are Verrucotoxin, has an LD50 in mice of 0.36 μg/g weight, comparable to tetrodotoxin of pufferfish, but more importantly the other is stonustoxin with an LD50 (i.v.) of .017 μg/g makes this 20x more lethal than tetrodotoxin.

I know it’s off putting, but these street side seafood markets are also restaurants. They usually handle all kinds of seafood and many times squid along with octopus. If you’ve ever gotten squid ink or octopus ink on your hands it’s not coming off easily especially if your handling that stuff hourly. There’s a difference between “working hands” from a fishmonger and “dirty hands” from someone who works outside these stalls. Fish market worker... I understand. If this guy was the guy who does oil changes at your local jiffy lube, then yeah I’d be worried of him preparing my food.

Lionfish is surprisingly good tasting, I love them battered and fried. Here in the US they are a major invasive species so they are not protected an easy to hunt. If only more people would give it a try here they would be surprised. My unkle has a sea-side fish taco stand an sells them in a taco or deep fried bites on a stick. He hopes to change peoples minds about them one taco at a time. Thought as he's said the main obstacle for folks is they are a pain to transfer without poking yourself, hard to process into filets without pricking yourself and its not a lot of meat per fish. But if we can eat something into extinction like so many outher unfortunate animals, for once let it be an invasive one.

Kind of guessing, but it looked like they started out with butter and some kind of starch (like potato or kudzu) to make a thicker consistency. Then curry powder, water, usukuchi (light colored) shoyu, some type of chili spice like ichimi or shichimi togarashi. No idea what 15:58 was, it might have been lard.
