Street food can be awesome. The best burger I have ever had from any source, was from a tiny street booth in Guadalajara, Mexico, with four stools, and rats creeping along stone garden walls in the dim light a mere 10 to 15 feet away. This Japanese chef/ vendor showcases his ingredients and preparation of each dish, even using shallow glass-topped cabinets typical of fine jewelry stores to display quality and hygiene. Those typically are the best indicators for safe street food. It's the vendors that hide their ingredients and disguise process that one must be wary of. Transient vendors should caution the traveller, but like every guideline there are exceptions. The impoverished indigenous women in Mexico that sold fried tortillas with the option of their home-made sauce, as a snack, on the street in or near urban areas, were one such exception. Although having only a haversack and a blanket for the young children to occupy, they were all a success in quality, in my experience. Their home-made sauces were profound... my immediate thoughts drifted toward 'certainly worth mass production and marketing'. Thirty-five years later and I have yet to taste a sauce with such nuanced complexities. Europeans have a better attitude toward 'street food'. They say what's best in refreshing honesty without being dazzled by interior design, lighting, or waitresses in sultry uniforms. Street food is worthy of consideration too, without prejudice. Food trucks and street booths typically have one major advantage as well. They specialize in just a few dishes. The focus afforded by a limited menu can increase quality dramatically if the vendor wishes it. That would be another criterion to evaluate street food before investing (or risking)... how has the chef-cook-vendor leveraged a limited menu to improve quality? Twice I have coped with food poisoning and am determined for that to never happen again. If there are other reliable indicators of street food, I will be grateful to read of them.

Authentic Edomae sushi rather than a food stall. The way to preserve the material and the presentation when serving it are wonderful. Each piece of material is soggy, and at that point you can get a glimpse of the freshness and high level. Don't be afraid to misunderstand, even Japanese people rarely have the opportunity to eat such high-class sushi.
