brother the pepper is called scotch bonnet...its famous in carribean food...also its made into sauce as well..taste very nice...In jamaica they speak Jamaican English and Jamaican Patois. Brother my favourite food in jamaica is Jamaican Patties..try that my brother... jerk can be made with Multiple thing such as Pork, Fish, Chicken, Goat, rabbit...Ect.
