Our first time trying Bulgarian food!
We tried both traditional food and street food in Bulgaria, and it was insanely delicious, WOW!
The food we tried on this Bulgarian food vlog:
- Banitsa (cheese pie/borek) & boza at Banica, Sofia
- Shopska salad, kofte, kebab and RAKI at local Serbian BBQ shop, 124 Aleksandar Staboliyski, Sofia
- Shopska salad, shkembe corba (tripe soup), tarator (cucumber soup), pork knuckle, and stuffed peppers at Contessa, Sofia
- Kavarma (pork stew), baked chicken and rice, mousakka (potato pie), and sarmi (stuffed grape leaves) at Safa Sofia

I’m from Bulgaria and my husband is from Romania, soo I can confirm we have very similar culture(like holidays and more…), food… even something and language is similar. 😂❤

​@@toniutsa5034what is similar in our languages, madam? Except we have some words like "da", we have nothing to do with you! And we are Latin and Europeans, whilst bulgarians are Mongol Turkic tribe, juat like hungarians! When Romania existed as Dacia, the so-called "bulgaria" from today didn't even exist on the map! You were still in Mongolia, on your way to Europe! You are not even real Slavs. You are Turks converted to Christianity.

A simple guide: 1. Kebab is not the same as kebabche 2. Kebabche is similar to a meatball with a different shape and using different spices. 3. Meatballs and Kebabche are usually not chicken. It's pork, beef, or a mix of the two so you kind of need to ask what it is to know precisely :D 4. Meatballs and Kebabche are both something you'd want to eat with this Bulgarian dip called Lyutenitsa (not sure if there's a correct way to spell this word in English). They offered you that dip but you missed it, which is kind of sad. It's sort of like ketchup, but tastes very different and most people prefer it over ketchup. It's often homemade. 5. The Boza is one of those things that you either love or hate. It's something you usually drink with banitsa. If you don't like it (like me for example), the perfect drinkable addition to the banitsa is Airan (pronounced "I ran") which is a simple drink made with yogurt, water, and salt. So, basically, Airan is like a simplified version of Tarator. 6. The Shopska salad is something that every place makes its own version of, so you need to try it in different restaurants and pick your favorite. The dressing is in the form of oil and vinegar. Sometimes salt as well, but in most cases the cheese should be salty enough for the whole salad 7. VERY IMPORTANT! You often eat out, in places that offer food outside, unlike actual restaurants. This is great for a quick bite but you don't always get the best version of the dish you're trying. So, I recommend you try actual restaurants as well :) 8. There are different kinds of that cheese in the Shopska salad. All have slightly different flavors, textures, and moisture so you'd want to go to a cheese store and try a few types. 9. Shopska salad is not always served with cheese sprinkled over it (as you saw). That's because some people like the cheese in the form of a block (like the one you got) and they decide how much of it they want with each bite. 10. Note: Tarator is not really a soup. It's called a soup because it's easier to explain but most people don't think of it as a soup, it's more like its own thing :D 11. The stuffed peppers also have a version with different kinds of meat. You might want to try and pick whichever suits your flavor 12. Musaka is something you want to eat with yogurt. I know... every Bulgarian dish you eat with yogurt, but this one is meant to be eaten that way. 13. Sarmi - same deal like with musaka. Meant to be eaten with yogurt. Both dishes without yogurt are good as well but incomplete. 14. Finally, Rakia is something that many people have a homemade version of. It's a drink that you can make using all kinds of fruits: grape is the most common one, apple, peach, apricot, pear, quince many more! It's often on the menu but you don't need to be a tourist to get a free cup on the open market for example. 15. Honorable mention is that grapes are also often used by people to make their own wine. That's it from me! I apologize for the giant comment but I hope this can help anyone coming to Bulgaria with high hopes for a good meal!

Mrmrmr..., some of us have traveled and know what is best and good where, and nobody says that everithing the best or the first in BG, but there are so many things that are, and we point at them in these conversations. Especially tasty are the gardening foods, grown on our soil and in this climate. I can tell you the best cars and home electronics are from Japan, the best olive oil, shoes and marble, per example, are from Portugal, the best music is german, the best lokùm is from Turkie and so on and on and on... :) And you nay agree or not, but that's not the point here.

I am Romanian. Amazing food. Lots of my favorite childhood food right there: musaca, stuffed peppers with yogurt, sarmale wrapped in grape leaves. I eat a lot of tomatoes and cheese, I would just steal your national food/salad and run away with it. Its amazing that it can still be found everywhere in Bulgaria normal yogurt and cheese, in Romania not so much anymore, just the supermarket thingies. The first thing I learned about Bulgaria and not shown in the video are the famous Bulgarian PICKLES. Where are the PICKLES? In my house, I have 2 traits: I do not eat steak with pickles, I eat a whole jar of pickles with a steak. And I do not eat food with yogurt, I eat 1 kilogram of yogurt with 1-2 stuffed peppers/ grape leaves sarmale.

Bro you are the proof that we are same :D My favourite meals are stuffed peppers (I preffer the red ones because of the sweetness) and sarmi with loooooooots of yogurt. I can barely eat this everyday. Did you ever tried stuffed red (dried) peppers with beans? I bet you will love them.

Bulgaria is one of these countries that I feel gets minimal attention overseas, but is severely under-rated. Everything looks so good and natural. It feels like a hybrid of Greek, Turkish and Eastern European food. I have only heard before a little bit about the yoghurt and salamis but had no idea until u visited the supermarket and was blown away by the variety and choices they have. All the food you have had at the restaurants looks so so good especially the cafeteria style one. It is now on my bucket list of places to visit for sure!

The thing about the boza is not to drink it like this, but to combine it with the banitza. The sweetness of the boza matches perfectly the saltiness of the cheese in the banitza.

It's great with banitsa, but you can also enjoy a nice small 2L drink of boza on its own.

Sure, but for me it is a bit too sweet and you might have to a pay visit to the bathroom afterwards, if you know what I mean( wink, wink). However, boza nowadays is not what it used to be 30-40 years ago. It used to have sharper taste because of the fermentation of the grain and it was also a bit sour. Today it is straight up sweet. But it is very nutritious though.

Like а Bulgarian I can say that these meals are the most typical for Bulgarian people and we cook them in almost every home. I am glad that you enjoyed so much! Our kitchen is simple, practical, with good ingredients and in my opinion very delicious ❤

In Bulgaria we eat everything with yogurt - musaca, stuffed peppers, different salads, tarator - which is cold soup with yogurt, water, salt, garlic, parsley, cucumbers and sometimes nuts, also airan - which is again yogurt with water and salt and is good with banitsa or for hangover 😂 We have a our own bacteria (lactobacillus bulgaricus) which is found only in this region and thats why we are so proud with our sour yogurt 😀. I remember when i was young my grandmothers had goats and sheep and they were making tons of yogurt every year...good times.

Whoever suggested Контеса restaurant (with the tripe soup) really wanted you to experience authentic bulgarian tavern, and they cook really well there. So happy you enjoyed the soup :)

I only visited the Bulgarian seaside and Veliko Tirnovo, but I got impressed with their stews (kavarma and kuvech, I know, the last one is called guvec in Turkish, but, as the Romanians, the Bulgarians put pork meat in the original recipe), they are so... comfort food, reminding you of you granny's food. At least for a Romanian granny :)) The cow's tongue is a great dish, too. Excellent with a tomato sauce aand black olives in the oven, mmm... The tripe ciorba contest is like choosing what's better, kebab, shawarma or gyros, they're simmilar but different and all good, depending on your taste. Of course, in the meatball on a grill sausage, Romanian mici wins by far :P I guess the balkan cuisine is like the history of the whole region, a melting pot full of flavors, from afar the same, but yet so different. I just want to end with two funny Romanian sayings: Boza (a drink which used to be popular in Romania at the beginning of the 20th century (on a Albanian tradition, or aromanian, as far as I know) is called Braga. The saying for something really cheap is "cheap as braga" (ieftin ca braga). Also, when you had too much to drink the night before, in Romanian the next day you have "a head like a banitza", possibly big and round :)) Have fun in Bulgaria, it's a very beautiful country, very green, with kind people, if you have a little patience to get to their hearts!

It's called guvec in Bulgaria as well. But you are right all the dishes are made by home grown products - meat, vegies, diaries. And yes every country is influenced by its neighbours, the borders were different through the years. In General the Balkans have great food and of course you have to know where to find it, because there is shity places everywhere.

Ipostaze, thanks for the nice message. And, yes, like the common ancestry we have the same problems today. Acctualy the junk food here in Bulgaria is not so cheap though, compared to some pretty good stuff if you know what, when and where to buy, and if you... eat a healthy bit of less food :)

@@ulfetkoroglu120 In Ottoman times everyone was calling things in Turkish because it was universal. It doesn't make them Turkish necessarily. We have it in Greece too and we call it Patsa and we also eat it after drinking. Also we say Shkembe for someone with big belly and chorba something very liquid. At least in northern Greece.

Bulgarian yogurt is the only yogurt that contain starter bacteria "Bacillus Bulgaricus" (thus the name) which gives unique taste, and it's, if not number 1, then top 3 foods Bulgaria is most proud of. Other than that, you have noted cleverly that we also love cheese, sweet pepper and dill :) ps - Be sure to visit the Tsarevets Fortress while in Veliko Tarnovo.

It is not yogurt, but the correct name is Sour milk! Sour milk is a lactic acid product that is obtained as a result of lactic acid fermentation in milk. There are two main microorganisms involved in the process of yogurt fermentation -" Lactobacillus bulgaricus" and "Streptococcus thermophilus". They are in a symbiotic relationship and this union between the two bacteria is beneficial to their survival and efficacy only when they are together. No fermentation is possible when only one of the bacteria is present. Each of the two bacteria has its own role in the fermentation process. The fermentation process ends naturally, by cooling. After staying in a warm place for several days (outside the refrigerator), the fermentation continues, the milk sours, the taste becomes unpleasantly sour. Bulgarian sour milk and Lactobacillus bulgaricus strains are products patented by the Patent Office of the Republic of Bulgaria. Its production is carried out according to the Bulgarian State Standard - BDS

In Germany, like in the Lidl-s in Portugal, is sold a real yogurt w/ the bulgarian lactobacilus, may be bought from our Institute named Elbi Bulgarikum like the Japanese do, but for a strange marketing reason it is called 'greek style' and is branded with big ugly letters sayin' 'GREEK/GRECO' 🥲🤐

The place where you ate the tripe soup is one of the best places for tripe soup in Sofia. Also I love how you immediately did the most bulgarian thing, putting lots of garlic and vinegar in it :D. Only thing missing is dipping bread in it, that specific pub serves homemade bread.

To be fair, the place you had Bulgarian Shkembe Chorba is probably one of the top 5 places to have that. They make it really, really good, so you didn't do dirty on our Romanian brothers ;) Also, trying traditional restaurants, next time when you're in Sofia, try out "Moma" or "Mamin Koliu" restaurants. Just know that no restaurant cooks traditional Bulgarian like Bulgarians home cook it. You will only taste true Shpska Salad if a Bulgarian Babushka makes it for you ;)

We have joke in Bulgaria about balkan food. A stake is given to the balkan people. Turks put sugar on it. Greeks put olive oil on it. Bulgaria put cheese on it. And the Serbs put on another stake😂😂 So just get food with cheese/ dairy in Bulgaria and you will be fine. Loving your videos of my country ❤️

You are right...Boza was traditionally a meal replacement! It is a very healthy probiotic drink! At the kebap place you had pavlaka, which is Serbian!

Oh I'm so glad you're trying the bosa, we grew up with it and banitza for breakfast. Yeah lol "liquid breakfast" is a good definition because the ingredients with fermented rye or wheat. The difference between the red and orange labels were that the orange one had sugar, the other had sweetener. The store should have explained this to you, its written on the label. I hope it was tasty, because I haven't tried this brand, not all of them are good. :) About kebabche haha is not like turkish, because ours are from pork, but yes Balcan food is very mixed, we influence each other, but nevertheless, each country has its own specifics

Some dishes of Bulgarian cuisine are similar with turkish cuisine but we changed jt little bit. Added some Bulgaria ln vibe in them :) Mostly of Bulgarian food is different than turkish one. :) Kebapche is different than Kebap. Its not same. Shopska salad is absolutely traditional Bulgarian salad. We created that in 50s during the commnism period in Bulgaria :) and we are so proud of this salad 🥰 The rakia that you got is home made 😅 of rakia is not in original bottle, its 100% home made. The cheese is also home made. It looks different than cheese in supermarket. This ladies didnt lie you. The gave you very high quality of food :)

QUICK TIP: For those who are going to try the Banitsa with Boza, you have to eat them basically together. First you eat the banitsa and you can take a small sip of the Boza, or just wait until you are about to finish with the bite, and then drink a bit more of the Boza! This is how you enjoy those two!

As a Romanian : Ciorbe , borș and soups The difference between ciorbe and borș on the one hand and soups on the other is that ciorbe and borș are sour whereas soups aren't. The Iskembe çorba (turkish) ot Ciorbă de burtă(Romanian) is typically eaten slightly sour and vinegar very iften used for that. For borș variety there exist a liquid called borș which is a naturally sour and is made out of fermented grain.

Interesting how you hit the mark every time you eat an unfamiliar food, and you eat it just like us. You also hit on the spices of the tripe soup, as well as the rice for the kavarma, we always put a ball of rice in the kavarma plate. :)

Home-made Bulgarian kyofte and kebabche are usually made of a mix of pork and beef, but there is a chicken variety, too. In some restaurants, you can find purely beef or purely pork ones, but they're usually noted as such. The store-bought minced meat, especially the cheap one, can often be a mix of chicken, pork, and soy, so my best guess is that the cheap off-the-shelf kyofte and kebabche are made of that.

Kofte is usually mixed minced pork and beef onion and spices Kebabche is pure pork minced and predominant spice in it is cumin

I like the places you have chosen, they indeed are authentic, kudos! I didn't know all them to be honest, even as a local :)) In general, our cuisine indeed has a lot of fresh seasonal ingredients and veggies, which I love. Bulgarian musaka has potatoes, carrots, minced meat, tomatoes, and the topping is made from eggs an yogurt (which we call sour milk actually)

As a Bulgarian, I cannot imagine a world without tarator or yogurt for that matter. We use yogurt in a lot of our recipes now when I think about it. Either as a main ingredient or as garnish. On the topic of the taste 37:47, I think it's because our yogurt is more sour in taste, which gives that additional flavor

Boza is one of Bulgaria's traditional drinks like the Airian. They are the two most common. It can be non or just a tiny bit fermented drink with mixed alcoholic-lactic fermentation of flour and oats like you said. But it's not really a meal replacement. Most commonly with a breakfast like a banica. BTW you must try Airian its amazing!
