材料:
鲜鱿 2只
辣椒1只
蔥花 30 g
洋蔥 30 g
雞蛋1只
淮鹽:
鹽145克
五香粉 1克
花椒粉1克
預備炸鲜鱿:
雞蛋1只
麵粉10克
生粉 8 g
撈勻
上乾生粉油. 油溫425度F (220度C)炸脆至金黃色. 炸兩次會更脆

洗淨鮮尤去皮切花成片,用廚紙抹乾水份.猛油作脆.蔥花.洋營.辣椒.起鍋.落鮮尤淮鹽抖勻.
Ingredients:
2 fresh squid
1 chili
Chopped green onion 30 g
Diced Onion 30 g
1 egg
Huai Salt(Pepper salt):
145 grams of salt
Five-spice powder 1 g
pepper powder 1g
Prep Fried squid:
1 egg
10g flour
Corn starch 8 g
Mix well
Mix well with dry cornstarch. Preheated oil temperature at 425°F (220°C). Deep-fried until golden brown. Frying twice will make it crispier. Sauteed chopped green onion. Onion. Chili. Then turn off the stove. Add fried squid. Shake well with pepper salt.

Wash & clean the fresh Squid, peel, and Diagonal knife lightly cross pattern then cut into slices, dry the water with kitchen towel.

@@MichaelsKitchen 師父,我已向你學習了很多成功的品種,义燒包,旦撻,牛肉丸,腸粉,燒腩,煎堆,油角,咸水角,鴛鴦炒飯,芝士蛋糕.....最喜歡是牛肉丸可制作牛肉腸,自從看了你的視頻後一切都進步了,加上疫情困家,現在就專心努力向師父學習,如家中有材料的話我便立即試做,給家人或朋友分享,真的謝謝師父的賜教,以前也有看其他視頻或書藉,但制成品總覺得不滿意,而師傅的就是那種久違的香港正宗原味道😋😋

這道菜期待已久👏 其實這菜式對我來講有難度因為之前整過炸極都唔脆,不過經師傅詳細講解我終於明白個竅門,明天一定試整,師傅請問若果"椒鹽三寶"加了帶子和蝦,帶子需要先汆水或是要醃過嗎?感謝你!

KC !您好!由於帶子和蝦受火程度有差距,如果要一起製作必需將帶子和蝦先飛水至70%熟再用紙塑幹再與魷魚一起上粉便可以了。

點解我加蛋去炸肉类, 炸極唔脆, 又容易翻軟?炸南乳雞翼, 需要加整隻蛋還是只用蛋白炸?哪種脆些?謝!

煮餸的技巧首先要了解所用食材的性能和作用才能运用得心应手/面粉和鸡蛋是起松化作用但会散和回软、生粉是脆和企身的作用但会硬/所以要根椐您自己的喜好将之调配混合便会有好效果了(另外:未炸够身亦会回软的)
