Michael Fassbender was amazing but you just can't beat Ian McKellen as older Magneto!

Fassbender was better in showing deep emotions while McKellan makes a perfect hard-lining villain. Young and old Magneto have different characteristics and both actors play them very well. I wouldn't compare them though.

Being old doesn't make you worthy of respect. Being wise and capable does. Wolverine is kind of a dumbass but can't be manipulated and his goals don't align with Magneto's, so that makes him an enemy that is easily defeated to Magneto, who taunts him because of the things I mentioned before.

Many years ago, I wrote a story concept for an X-Men film that would've been inspired by the EPIC storyline: Days of Future Past, and one of the ideas would be that Wolverine fosters the son of that bone-marrow throwing mutant that Wolverine killed in this scene.
