It always moves me to see how solicitous of Julia Jacques is in these videos. He loves her, appreciates her wisdom, and is taking care of her so that she doesn't hurt herself with her maladies and diminished skills.. This is an example of two friends who loved each other. Oh...they also made great food.

"my impeccably clean hands" I love how he quoted Julia. It shows how much he respects and admires her.

Intestinal tract filled with “gritty things,” true, but also stuff that rhymes with “gritty.”

I’m with Jacques. You eat the whole shrimp. It’s not a problem that they’re not cleaned before they’re cooked.

Seeing all these shellfish dishes reminds me of my grandma, mussels and clams were her favorite.

Have you ever tasted an uncured olive? I often think the same thing.

My family chews raw shellfish. They also would make a sauce that would include a Bavarian Sweet Mustard with pickled Capers as a garnish. No clue as to why but it is a family tradition. My family has no German or Eastern European roots.

when eating raw oysters out of the shell do not touch your lip to the outer shell... that is where the danger is
