I don't want this to become "June teaches literally everyone how cooking works", but if this channel became "June literally teaches everyone how cooking works", I wouldn't really be that upset. June is just SO WONDERFUL! And so informative, and so patient, and so knowledgeable. She's just awesome, and I hope everyone has that June Love in their heart. XD

I have a suggestion for the peas. (I'm no chef but I've been cooking since I was 10 years old and I'm 64 now). If you keep the peas frozen and add them last, after everything is cooked, then just stir them in and let them sit for a few minutes, they'll keep that crispy bite to them since they don't get over cooked.

Isn't that the way everybody does it? I'm always surprised when someone doesn't. I don't even add the peas to a huge pot of soup, unless it will be all gone at the end. I make a huge pot, put the peas in the bottom of the serving bowl, and add the soup. Then, I can freeze the soup and still have nice fresh peas when I defrost to eat the next time. Quarantine has been the best 'pot of stew" time in my life. lol

The only way you can fail at fried rice is by not making fried rice. Also, store bought fried onion bits are a great and easy way to add some crunch.

I literally did the paper towel and rubber band trick last week. Only I also wrapped it in plastic wrap too, then the rubber band. Worked like a charm.

I loved this video because I loved how I felt after I finished watching it. I know what it's like to WANT to make a great dish but you're not that experienced with cooking. So I totally get Jackie, and I'm totally grateful for June. Then cap it off with a happy dance. Perfect.

I just leave my eggs in the pan, push them off to the side, and push that edge of the pan off the flame a little. But I also really like it when the eggs get a little brown on the bottom :D

Frozen peas are a great snack for teething babies. (Obviously only if they are old enough for finger foods). It help their painful gums and is a healthy snack!

When starches cool after cooking, some change into resistant starches thats why the texture is different if you cook fresh or use leftovers

Why not sesame oil?

You don't want to cook with sesame oil because the hot temperature will cause the oil flavor will denatured and turn acrid tasting. Sesame oil is more of a finishing oil, drizzle a bit on the fried rice after you have take it off of the heat

Yo, fried rice with hot dogs! My friends mom used to make that for us. It was SOOOOO good. It also had lima beans. Well, maybe it was good just because it was with good people? Either way, great memories!

While this process is different from 炒飯 cooked w/authentic Chinese method, I like the way you are introducing a nice fusion of Chinese American and traditional Chinese cuisine. It will amuse me if you explore more of this mixed curinary way...... From a Japanese native who knows many native Chinese chefs including one iron chef. 👍
