YES! I love that Togiharu blade. It's always a conversation starter at Thanksgiving and Christmas when we have guests!

Nice tips, I have been a chef for like 15 years now and G shock Casio is the Go to work Watch. But that Cake Tester Tip, Gonna have to give that a try at work.

The silver watch you showed is not a G-Shock. It's the AE1200 AKA Worldtimer AKA "Casio Royale".

Hey Justin, would like to say Im definitely a fan of your content, being a culinary school grad and now a year into my first kitchen. Keep up the great work Chef. I would like to see a video on your more digital set up for kitchen life. Be it recipe set up like in this video or more of the management side. Anything to streamline things more digitally.

Never thought of using that cake tester to check for doneness in that way. I've used them to check fish though, if you feel it catching on the layers of flesh then it's under. Great tip! Also, gonna check out those g-shock watched. Great vid bro, keep on crushing it in the kitchen! Gained a follower for sure.

Ahaha! It's a "Rite in the Rain" notebook! XD This gear drop is so much like those prepper videos I've seen all over KZfaq. I won't be surprised if you're going to build a survival shelter in the woods with your cooking gear at some point in the future.

Hey a Justin, nice videos, great tips! One thing, if you like Google Drive, check out Evernote. You can use it on your phone, tablet, and computer. One very cool thing that I LOVE for recipes is in Google Chrome browser, there is an Evernote clipping extension you can add to your Chrome browser. If you find an online recipe, you can just “clip” it and it perfectly saves it for you. Everything is totally searchable, just like with Drive. Also shareable.

Hey Justin, first off I want to thank you for all your awesome videos. As a subscriber, I’ve watched all your videos and take your advice very often on gear and attitude in the kitchen. I recently had my kiritsuke shun blue stolen in the kitchen. I used it daily to butcher salmon. This sliver looks like a great replacement, I just need to know where I can get one. I checked chef knives to go where I buy most my knives but they don’t have that one. Any recommendations where I can get one just like that? I dig the top since it’s similar to the kiritsuke, plus the dimples like a misono. Thank you in advance and thank you for all you do! Keep up the good work chef!!!

Nice tips. Interesting difference in hygiene standards that over here(Finland)you are not supposed to wear jewelry, including watches, in the kitchen.

Thank you for sharing you knowledge, I've learned a lot form your videos :) In regard to fish butchery, I'm curious as you are using a stiffer knife the the traditional european filleting knives. And I know that you sharpen your knives at a asymmetrical angle. Do you have any experience with deba knives or yanagibas? As these types of knives seem to be somewhat similar to your knife. Would you ever consider using a yanagiba as fish butchery knife? I just a hobby cook, so investing 200 bucks on a specialty knife, is a little bit overkill. I would like to invest in a slicer that I could use for more than just one task, but my budget is limited to 100$ as I'm a student. In this price range I've found several yanagibas and a few slicers. The problem I have with the slicers is that the tip of the blade is in line with the spine of the knife. I personally feel like a have less control over knives with this design. Most yanagiba knives tend to have a straighter blade shape, so it got me thinking, would you use a yanagiba for fish butchery? Any advice? :)

Thank you for the answer! After ruling out the Mac 8 inch yanagiba, I'm torn between a Masahiro MV 200mm slicer and a Kai Wasabi 210mm deba..I don't have all that many options as there are very few knife merchant here in Norway. I'll keep you posted on my final decision. Again thank you all the help, and thank you for sharing your knowledge :)

A watch is illegal to wear in the kitchen in my country due to our health and safety laws around food and I strongly agree with the law on that part. Jewelry and watches are sources of bacteria and other dangerous things.

Timex Ironman watchs are way better and less expensive than G shock. G shock cant survive surfing. Timex Ironman is a beast
