I had my 1993 ZX11 D Sitting in my garage for 2 years for fouling spark plugs. Just brought it to a vintage shop for a diag. and inspection. If the engine comes back good, I will have EVERYTHING done, including full rebuild, all fluid changes, brakes, tires, etc. I loved the way the bike ran--even better than my 2005 ZX14. I always put premium (no ethanol) into my ZX-11, CB550 and KX900 and all of my other farm IC equipment . You are absolutely right, ethanol is a carbs brutal enemy! Just had my ZX-11 leaking fork's rebuilt by my mechanic. The ZX-11 is one screaming machine and can run with all the modern liter bikes no doubt!

Any of the cylinders running uneven will burn plugs and even run much higher temperatures on pipes etc. Check the carb is sorted on the 3rd cylinder. This is rule of thumb without changing anything

Front forks on mine set with refresh of oil is 3 clicks on rebound damping, 3 lines showing from Top to top of shock for preload. This is on the 1990 C1 model. ZZR in video is some sort of D model. On changing oil I used 400mm of 10w mineral oil, you can if you choose too, use fully synthetic. Rear shock, preload is standard on rebuilt and painted shock and spring, (like new), again, 10W mineral oil filled until near bladder depth inside reservoir air pumped out by multiple presses of shock up and down without spring yet fitted. Replace top then pressurise to 140psi. Don't forget to do same to both front fork legs without spring fitted pump legs up and down, until no more air bubbles. Set rear shock rebound dampening to 3. Works great for me so far. Am around 14 stone or roughly 94kilo's. Great two up too with lighter rider. Me missus. :-) lovely bike buddy. Sounds nice. Sweet. :-)
