Spinach soup
Spinach soup is one of the delicious Iranian dishes that is easy to prepare and has its own fans. Spinach soup is suitable for treating colds. This dish does not use vegetables and its only vegetable is spinach. If it was not the spinach season, you can use beet leaves to prepare this soup.
How to prepare spinach soup:
Ingredients for preparing spinach soup:
400 grams of spinach
Half a cup of rice
Mung bean half a measure
Lentils 2/3 cup
3_4 small onions
Enough curd
Salt, pepper and turmeric as needed
Hot mint as needed
How to cook spinach soup:
Wet the rice, mung bean and lentils separately from 4-5 before. During this time, change their water once or twice to eliminate their bloating.
Chop the onions, first fry the onion in oil, add turmeric for the last 1 minute, empty the soaked rice, pour it into a pot and pour about 2 liters of water and put it on a simmering gas flame. Add lentils and mung bean to the pot. When cooked add salt and pepper, a little hot onion. And add chopped spinach
Increase the flame a little to boil it completely and then reduce the flame and let the spinach cook and glaze it;
In the last minutes of cooking, add some hot mint and a tablespoon of curd to the soup,
When the soup is ready, pour it into a bowl and garnish with hot onion, hot mint and curd.
