PREPARATION:
-Soak the beef for 1-2 hours and then add it to boiling water. Immediately add a bay leaf and black and allspice peas.
- Remove the meat from the finished broth and remove it from the bone and cut into pieces.
- Chop the onion, sauté in vegetable oil until transparent, add diced pickles and simmer for 7-10 minutes. Then add tomato paste, pour brine and boil for 5-7 minutes.
- Fry sliced sausages, smoked brisket and ham separately.
- Bring the strained broth to a boil, add the vegetable mixture and cook for 5-10 minutes, then add the boiled beef and fried smoked meat and cook for another 10 minutes.
- At the end, add sliced sausages, add salt if necessary and cook for 5-7 minutes. Before turning off the heat, add capers.
- Allow the finished brine to infuse for 15-20 minutes. When serving, put olives, greens, sour cream and a slice of lemon on each plate.
- Do not salt the broth when cooking, it is better to bring the brine to taste at the end of cooking. It contains a large amount of smoked meat, pickles, olives, brine, so it is easy to overdo it with salt.
You can use cucumber or olive brine.
- The wider the assortment of meat, the tastier the pickle. Be sure to use several varieties of sausage.
