This is a comparison of the Work Sharp Precision Adjust Elite Knife Sharpening system, and the SharpWorx Knife Sharpening system. If you want to learn how to sharpen knives just like the professionals do, then all you need is the SharpWorx system. While using the SharpWorx, you will learn muscle memory, and eventually be able to sharpen knives on your own just as the Pros do...

Thanks for your work demonstrating the Sharpworx system and your Edge On Up idea. I ordered a Sharpworx with a diamond plate and diamond emulsion and have had excellent results. My test subjects have been some chef’s knifes and I have not been able to get as sharp an edge with other guided stone systems. Your discovery of the Edge On Up hack, and proof of concept demonstration prompted me to order the Amazon Scale and EOU ATF10G and DoubleX+ Test Media. Those parts are now on the way and will be useful to quantify my results. Keep the videos coming. -Biwwdabeah

It is also a great learning tool, and is helping me with learning muscle memory. Happy to hear that the video helped, and am sure that you will find the edge you desire. It is good to hear from others who have actually used the SharpWorx guided system. 👍 The Amazon scale was a great find, and was happy to be able to pass that information along to others who like me, can't afford the bess sharpness testing system.

God bless you brother. That was a great video, I just found Sharpworx yesterday and today you came up and sealed my decision to purchase one. I am a sharpener and have a bunch of different machines but wanted a fixed angled stone system that I could trust. I have no idea why I didn't find them before yesterday but I'm glad I did. I have a worksharp I’ve been using on pocket knives but found larger knives moving around. Ordered a sharpworx yesterday for my kitchen knives to use on my bench stones.

Thanks Donathan for the comment. That is odd, I have used bigger knives on the Worksharp and had no problem with them moving around. You can crank down pretty good with the Worksharp clamp, maybe you could try cranking down a bit, and see if that helps. I have updated the SharpWorx to hold the clamp from the Worsharp, and have not had any issues with the clamp. Try that again with the Worksharp clamp and try to clamp it harder to see if that makes a difference, and let me know if it works. I will be doing a video on the hack I did to the SharpWorx, and would be good to know if the Worksharp clamp is not working for some people. I really like the Worksharp clamp, and was going to contact Worksharp to see if they would be willing to sell just their clamp for use with my hack system. hmmm. @@Outside-In. I had the 2 little plastic supports on the clamp break on me and they sent me a replacement free of charge so they might be willing to sell you just the clamp. I think I’m applying to much pressure and work in a back/forth motion when sharpening on the worksharp so that might be the issue. I’ll try your method of sharpening and see how it works.

@@donathan5932 Thanks so much Donathan for the response. Maybe your stronger than me LOL... I twist as hard as I can, and it doesn't bother it. Mine don't have two little plastic supports (or maybe I am not seeing them?). I purchased the Elite version, but if you purchased the basic version, maybe their is a difference the way the clamp is made?. If that is the case, glad to know that, and will ask them specifically about the Elite clamp. Interesting... It is nice though that they sent out a replacement, as that speaks highly of the company - good to know. The Work Sharp is a great sharpener though for sure. It works great for those knives that are too small for the SharpWorx :). Yes, another thing about really any sharpener, you really don't need a lot of pressure, and so you may be correct, that it was just too much pressure applied and caused the break.. Just a guess

If you have to press to make some side flat with the stone, you are putting more pressure on another side of the edge (that already touching the stone without you press it) and in the long run you will alter the edge profile of the knife.

Hopefully I didn't say press down as you are right, that would put undue pressure on one part of the blade. I was trying to say to bring the knife down staying level with the stone, and not adding pressure. I don't think I said anything about pressure, as you really don't need or want to add pressure. I just subscribed. I always wondered if you could just use a regular scale to and didn't realize you could get ones with hold feature like this. Thank you my man. When I looked there is two different models .1 g and .01g. I got the .01g for better accuracy

Unrelated to this video, but you saved me from buying a bad air quality monitor with your other videos. I would like to see a test of radon detectors. I had planned on buying a test kit which is mailed to a lab, but some of the reviews question their validity. It would be nice to have an affordable meter to test for myself if such a thing exists. Thank you!

Thank you Dan, and am glad that we saved you from buying a bad monitor. I am getting ready to get back into Air Quality, and a company Dylos is sending me their DC 1100 monitor for review and testing and teardown. I am excited about doing this video as it can record constantly for keeping track of air quality over time. About Radon. I have looked into that, and am interested in doing some videos about the subject, but I am in the process of doing research so that I can give good and accurate information before tackling this. However, I am strapped for funds to continue these types of videos, as everything that I review, I have to spend my own money so am limited on what I can do. Thank God Roger at Dylos is sending me theirs for review, and I believe he is also sending me a new monitor that is not on the market yet, but asked me to evaluate/beta-test it for them. I would love to do some videos on Radon, but will be happy to do that as soon as we can afford to buy one. Outside In is still a small channel, so it is hard to find companies that are willing to send us something for review. We need more subscribers before companies will take a hard look at us for reviewing their products. We are getting there, and are excited at how much Outside In has grown in the past few months. It is taking some time, but we will get there. I do thank you for your comment - it is much appreciated, and we will be getting into Radon as quickly as we can get the funds to do so.

*gonna watch the video later today, but what i can already say is the comperasion which makes the knive sharper isnt such a sencefull approach, the question is which is faster and more ergonomic. Extreme sharpness can also be achived with low grit as long as the stropping is done very good. ->Edit, if you sharpened two times with the same systems and measured it, that changes it, as the *chance* of slightly higher/lower sharpness gets reduced compared to just one Will comment more later, great video idea to review this unique sharpener! 👍

Thanks for the comment and opinion. Great points you make. My intention was to get this sharpener noticed by more people. I love the SharpWorx, and am excited about being able to use this as a tool to learn sharpening without assistance. I am not a pro at sharpening, so why my ideas about sharpening are pretty much new. I've never used a machine before just free hand and I can't afford one a those fancy stones, I usually just pick one out of the driveway. And when I get done I pick a hair out of my beard and if I can split it anywhere on the blade I'm happy 😮 All jokes aside, weather with a machine or free hand, your personal stance and ryithum is what makes the difference. Keep the ryithum, I liked the video 📹

You get your knives sharp, so everything im gonna write is not "needed" but just additional tips to make things faster&easier. At 24:10 you lift the blade for every pass, that will drasically worsen the abrasion/time ratio. Doing it back and forth (no matter how exactly you move it along, thats personal preference) is more than twice to trice as fast. Ofcourse at first do whatever feels good, but there is always the option to improve and become comfortable with the more efficient option. Also if you do edge leading to minimize the burr, thats not needed this early in the sharpening. Also edge leading results in a slightly thicker apex, but reduces the need for stropping. Though edge trailing, with stropping is sharper. And if you will keep all grits at the same angle, thats a bit of a waste of time, as you need to get out the scratches & sub surface damage of the previous grit. Also if the edge gets tiny damage/normal wear, the volume of steel to remove is very large due to the large surface of that one bevel. I like to do 3 steps, of which some can be skipped depending on amount of wear. 1. Thinning / Relief Beveling: (While an optimum new blade with a full flat grind and a very small bevel is optimal, over time this will get thicker, and thinning the whole sides takes aaaages without, and even with powertools.) So instead i thin the thick edge bevel by estabilishing a new 10dps "relief" bevel. This gives extremly good cutting geometry, reducing wedging, but is way faster to do and doesnt scratch the sides. You can do this with very low grit, but could quickly smooth the surface a bit with finer grit, you dont have to remove the sub surface damage, just so that it decreases the friction when cutting. 2. Apexing / Microbeveling: Take the finest stone you have, and sharpen at your intended edge angle, edge trailing (results in thinner edge) and side alternating passes, until the bevel is roughly 0.1mm wide, which should be *extremly quickly* due to the low surface area and by that volume. This bevel gives the needed stability only where its actually needed, most damage is only 0.02mm to max 0.05mm large (done a lof of tests on that.) So 0.1mm is very save. 3. Stropping, side alternating edge trailing. You need to figure out how much passes you need on average to fully remove the burr, its good to figure out the sharpness/time ratio. 15 passes per side depending on strop and knive might be almost as sharp as 100 but way more time efficient, but too few might leave a burr. That should pop a free standing hair, about 2cm above where you hold it. (Good test for max sharpness.) Btw you got good bess results! Great thing now is, that you have an edge with: -reduced wedging -stability where its needed -extremly fast to touch up microbevel So: -if its just slightly dull, strop it shortly -if you see small edge damage, do some passes on the microbevel with your finest stone (the volume of steel to remove is extremly small), then strop -of the microbevel gets to large, thin it again No more full resharpen because of tiny edge damage needed. 😉👍 And on the sharpener, i think its awesome! Way bigger stone, and way more stone choice. The one thing it lacks is the ability to do fast alternating passes for microbeveling and stropping. So despite any guiding systems, i ended up doing that per hand, as long as i check the angle after it, and to the hair pop test, thats fine for me. But for setting the 10dps relief bevel, guided systems are a blessing! Btw 29:22 to 21:29 😉...

Wow - thank you so much for your detailed information and help. I love to learn new things, and sharpening is one of the things I have always wanted to know and do, but the learning curve - CAN - be quite big, intimidating, and distressing LOL... Getting help from people like you, that "have been there" is priceless. I do appreciate your time in this comment, and also the thumbs up, especially since I am kinda new to all this. I wasn't even sure that I would be the right person to do a video like this since I have no real experience, and also was a bit afraid of how people would view me attempting something with very little experience, but this system (to me anyhow) truly needed to get some notice by others who were looking (like me) for a way to learn the technique of manual sharpening in a guided way and confidence, so thanks again for your being easy on me LOL ;). You are very right (and after reading between the lines) - that I need to be a little more precise, but I am sure that that will come with more experience and confidence, but just another reason I needed to do this video so others would find this gem, and would be able to finally learn with confidence because of a system like this. The back and forth method you speak about sounds great, and I actually ended up doing some of that during this video, but it didn't make it into the video after editing. When I tried the back and forth motion, it did feel a bit better (but sketchy), as I wasn't so sure it was the best way or even a good way, and didn't want to get someones dander up, so left that little part out of the video. Knife sharpening is a very very touchy subject with allot of people, and was just another reason that I wasn't quite sure that I should even attempt such a presumptuous feat, but I love a challenge, and without taking that first step (no matter how scary), we will never succeed at anything... I am so hoping that Mark will offer to send me his professional version because I have purchased a few different types of knives in anticipation that he would, so I could create another video using this awesome system. I see too many videos where people review a product they don't even understand how to use, and why I was so afraid to attempt this because of my lack of experience and understanding of proper sharpening technique, but I am very excited about how it turned out, simply because it showed me that - even though something like this - that can be very intimidating, can be accomplished as long as you have the right system to tackle even the most difficult tasks... ...Yes - cutting the time continuum is a goal, but not sure that I will be able to pull it off 😅 A big thumbs up 👍 to you for this comment and very valuable information and help - truly truly appreciated.

Hi. Nice video and some nice gear you are using. I stumbled upon the sharpworx system yesterday, and I couldn't find much information except from sharpworx themselves. But I have a Question, you mention a similar system from Germany. I live in Norway and due to shipping, duties etc the price of the sharpworx wil at least tripple. So I want to check out the german system as well, to see if it is possible to get.

I just sat down and watched this whole video again just to be sure, and just like I thought, I can't find anywhere in the video where I mention Germany or a similar sharpener in Germany like the ShaprWorx, so please could you tell me what you mean. I do apologize to anyone that is a pro at sharpening for my presumption that I could even begin to think I could possibly help anyone when it came to sharpening knives because of my lack of experience... But... I just had to get this sharpening system noticed the best way I could by doing my part to help Mark (SharpWorx). I would also like to give a shout-out to Burrfection for all his help making videos that give people a confidence to begin sharpening. Please check this guy out - he is awesome, and novices like me can learn a great deal from him - www.youtube.com/@Burrfection Knowing (through much research) that there are allot of people that take their sharpening very seriously, I wasn't sure I should be so bold as to attempt a video like this, but I suddenly remembered one of the best things I like to say, and that is - If I don't take that first step (no matter how scary), how will I ever succeed at anything?.. Just-a-thought... Please let us know here, what technique you have found that puts you into that comfort zone of sharpening. It will be great to hear other points of view.

You did a great job. I have been watching many videos of different systems and I was wondering how I would design a system. I came up with an idea very similar to the Sharpworx. Then I came across your video and saw that someone (Sharpworx) had already made it, except their design is better than mine. The only issue now is the cost.

@@nowthenad3286 Yes, Nowthena, I have also created my own version of the SharpWorx, and it is now in version 3, and will be creating a video soon about it. I also have started development on a version 4, but am hoping to get with SharpWorx and Works Sharp to see if they are willing to join forces to create the ulitmate Sharpening System, that I have designed. I would do it myself, but I definitely cannot afford to pursue it lol... Thanks for your comments - they are much appreciated. Check out my other video where I hack the SharpWorx to create a more professional version of it with a few printed parts, and a few more parts from Amazon. I couldn't afford to purchase the professional version, and Mark wouldn't send one for review, so had to think outside the box, and create my own, and then thought I would share it with everyone. Plus - now that SharpWorx came down in price, they have sold out, so couldn't get one even if I could afford one. :)...

Where did you get your stones? The ones you recommend are not 180x60 to fit that machine as far as I can tell. They were shorter, wider and thinner than what comes with the Sharpworx system. Did you modify the mount in some way? Thanks for the nice demonstration.

Thanks for the comment and question. Are you talking about the diamond stones? I had to make blocks for the diamond plates to fit the Master system (I used 1x4 pine wood), as the plates were too thin, and not long enough to fit. I did not modify the Master System. The ceramic stone was too long to fit inside the Master System, so had to sit it on top of the Master System. The links for the diamond plates, and the ceramic stone used in this video, are in the description. I am thinking of creating a new video comparing DMT diamond plates (not the ones in this video) versus water stones, but if I create that video, I will be using a modified SharpWorx Master System - as the DMT plates, and the Water Stones are too big to fit the Master System, and the reason for the modification, is because I can't afford to purchase the Professional SharpWorx system to create the video. I was hoping that SharpWorx would have been willing to send the professional to me for review, but since they are not interested, I had to convert the Master System into the SharpWorx professional system with a few products I found on Amazon, plus a couple 3d prints. I hope this has answered your question.

ok, thanks. I don't want to spend even that much as I already have some stones and a chef's electric. I found some Wedgek angle guides that can be put on the edge of the stone and held with a rubber band. It helps with setting the angle. Going to give that a try for now. Thanks for reponding. For the average user, it seems that the roller type sharpeners make stones and other types of systems obsolete.

Thanks John for the comment. I think those rolling ones are pretty cool, but have not been able to get one to try, but in the end, there is nothing like learning how to sharpen manually for sure. It is very relaxing, and in most cases, reduces stress. The rolling sharpeners do seem quite interesting, and I wouldn't mind getting one just for the comparison aspect, but definitely would not use it over the SharpWorx or the Work Sharp type of sharpeners.

Absolutely, but as I said, the roller type will appeal to the average and beginner users such as myself with only 1 pocket knife and a set of 5 kitchen knives, while you are a professional. Speaking of getting one, they have barely shown up here in Australia, so I asked my globe trotting brother in Canada to get one for me; no way, all sold out, hundreds on back-order, next year some time! @@Outside-In.

@@johngreydanus2033 Thanks John for the compliment lol.... I am by no means a professional, and would never pretend to be. I am learning just like you, and learning more with every sharpen. I say find your comfort zone, and you are good to go. WOW! back order by that much??... I hope you can get one, and then you can let us know here how it works for you, as like I said, I would like to get one, but right now, I have no money to buy one, so no need to get my hopes of for getting one. You are right as well, this would be good for a beginner with a single pocket knife and a few kitchen knives to sharpen - much better on knives than those pull-through sharpeners, as they just tear a blade to shreds... But I still choose to sharpen manually for the enjoyment of it, but if time is a factor, then yes, the rolling sharpener looks to be a very good sharpener to have around.

It was a cringe thing, but boy does it work, and I am pretty sure it is a better way of dulling a knife than using a brick or concrete block - I think anyhow LOL... 👍

You are totally using the worksharp wrong Steven. You need to do back and forth motion on the one side of the blade until you develope a burr then flip the knife and repeat once the burr is developed on the other side flip the knife raise the grit and do it all over again continue this until you have gone hey all of the grits. Then strop your knife with pull motions only. 10 stokes per side. If you feel you need more do more. Your testing is not fair because you are not ushering the work sharp system correctly.

Thank you Louie for the comment. Back and forth is a personal preference, and for me, back and forth does not feel right, especially with the Work Sharp sharpener (stone into blade). I like one stroke, the full length of the blade on one side until I acquire a burr, then stroke the other side until I reach a burr on that side, and then rinse and repeat until I get the desired edge. I prefer not putting the stone into the blade, but rather putting the blade into the stone, that is the way professionals have been doing it for decades, and the way my father always did it, and I understand why that is because that is also what feels the most comfortable and right for me. If you like putting the stone into the blade, that is fine for you and obviously it works for you, but let others find what works for them, and why in the video I say that a person needs to find their comfort zone and not listen to those who tell them they are doing it "wrong". The only wrong - is not trying at all. The right way to sharpen a blade is subjective, the right way is as simple as finding the way that works best for you, and most people that sharpen wrong, will eventually find the right way through experience and watching others, and when they find the right way that works for them, it won't work for everyone, as there will always be someone that will say they are doing it all wrong...

@@martyhog01 I am not sure, but maybe it was wrong, but it sure felt good to me anyhow, but I guess the proof of the pudding - is in the taste right?... I am still learning, but am enjoying doing it the way it feels the most comfortable to me, even though others may see it as wrong. That is what makes life so interesting.... So many different opinions.

You are right, professionals don't use guided systems or the inexpensive stones I have, and not the purpose of the video. The purpose of the video, is to show that there is a guided system that can be used as an aid to learn how to sharpen a knife just like the professionals do, and eventually graduate from using the Sharp Worx guided system, and sharpen by hand.

I wouldn't have thought that professionals would use guided systems, but it does (I guess) make since at times that they would, and would be for those times when they want to be sure the angle is true and accurate throughout the sharpening process for a particular client?, but that is only an assumption, and not sure that is what you exactly meant LOL... Thanks for the input - much appreciated.
