This video shows the brand and style of knife that I use in my job as a homekill slaughterman. PLEASAE IGNORE THE LINKS, THEY ARE NOW INCORRECT. The knives can be found at "PGG Wrightsons" in New Zealand or "Victory knives'' in New Zealand.

Bit of trivia , when you skin a Kangaroo you can strop your knife on it's large foot pad and it stands the edge back up . The pad is quite hard and embedded with grit .

He briefly mentions this in the video from 5 years ago called Homekill Truck Set Up. Right at the 7:15 mark. Just uses a water stone on his truck stairs. Since they're simple carbon steel knives used as heavy duty tools, I'm guessing he uses a lower grit stone (600-1000). As for keeping them sharp, don't run the cutting edge on bone and keep them in the scabbard while you're working. Then store them in a way that prevents them from being jostled around and hitting their edges on other things.

Thanks for this! I'm a chef and recently had my first few tries at skinning and gutting sheep, helped a great deal by your videos. I used my Giser boning knife, and it dug into the flesh several times. This explains that it wasn't only my incompetence as I had assumed 😅😅😝

I notice that quite a few people use the Lamb skinner design like the Victorinox Lamb skinner to open up then the curved skinner after that . Not sure if that's a promotional thing though. I like carbon steel also. I have a carbon steel Swedish Eskilstuna firma chisel that will cut a standard grade 1/4 inch bolt right off and not gap the edge . It's the finest piece of steel I have ever used . Running those knives up and down your arm was freaking me out Ray .

I rarely use the curved skinner. I only really use it for cutting the throat.

Thank you Ray, could you please explain the merits of using curve knife? in what segment is it best used for instead of the norm straight knife?

I use the curved knife to cut the neck and to flay the hide. For me it makes doing that particular part very easy. The actions that I do when using that knife do not work as well with a straight edge knife.

Great video Ray, just wondering what you use to cut tip off boning knife, I imagine it would be tricky to keep it from getting too hot. Cheers Dave

I use an angle grinder with a cut off disc. I am not concerned about getting it hot. It is only the tip that would be affected and I round that off anyway.

I've just reshaped my knife with a hand file. It took about ten minutes - filing in line with the blade. I found that you have a lot of control over how much material is removed and the final contour of the blade. Hope this helps.

I’ve never seen that green river brand in nz I know USA make one but they are wooden handles over here in Australia.

No, just wash them properly with a detergent to get rid of the fat.

@@4doorsmorewhores298 I didn't say it gets the stains off, I said to wash them with detergent to get the fat off. The stain is there forever.

In my opinion they are ok. I find them hard to keep sharp.

I'm a very competent skinner gutter what ever you want to call it! Knives are a very personal tool I couldn't use any off these!

What about Victory knives made in NZ they seem to get good reviews . Ray you should do a honest review of them be very useful .

I have used victory knives before. I am still using one at the moment. I am frustrated with Victory as they make the carbon steel (Green River) knives just not in the style that I am after but they do make that particular style in Stainless steel. The trouble is, is that I am a very small fish in a very big sea.

yes, I have asked twice and both times they said no. This is the reply from them; ''Green River is a Carbon Steel range that is now limited to a select few products that sit with the rural / hunt sector. As you are probably aware stainless meets the food regs, Carbon does not, in turn the total carbon market is shrinking and the focus / market sits with stainless.'' Yet they make other styles in carbon steel. I can't make any sense of it.

They have a few different styles of Handel's an different steel with some hope it helps you out always like waching an lurning some different techniques from a fellow butcher
