Many of you wanted to know how to make Kara-age (fried chicken), so here it is!
◘ Chicken Never Fails series

♦ Crispy-battered, juicy morsels! Home-style Fried Chicken
[Ingredients (Serves 3-4 people)]
• 2 pieces (250-300g/piece) bone-less chicken thighs, cut in large, bite-size pieces
● Marinade
• 1 knob grated ginger
• 1/3 teaspoon salt
• 1 tablespoon soya sauce
• 1 teaspoon sake (cooking wine)
• 4 tablespoons cornstarch
• frying oil, lemon wedges
[Cooking Instructions]
① Cut chicken thighs into large, bite-size pieces. Lay pieces on a flat surface (tray or large plate) and use a paper towel to absorb any excess moisture from the meat
② Add ingredients (except for cornstarch) for the marinade and massage well, into the chicken pieces. Cover with plastic wrap and let it marinate for 15-20 minutes
③ Again, use a paper towel to absorb any excess moisture. Sprinkle over cornstarch and make sure all pieces get covered. Shake off any excess
④ With each piece, make little rounds where the skin is pulled tightly around the meat to form a little ball. Line them on a plate or tray
⑤ Heat oil to medium-high heat and add chicken in one layer. Turn up the heat and fry for about 2 minutes, without touching them! Once they've slightly browned, turn them over. Cook for another 2 minutes until all sides of the chicken are golden brown and the bubbles in the oil get bigger. Near the end, take the chicken out of the oil for a few seconds to expose it to the air, to kind of dry it out; then return it into the oil for the last bit of cooking. This crisps up the batter. Total cooking time should be about 4-5 minutes.
⑥ Take out the chicken and set it on a cooling rack to drain any excess oil. Line the pieces with the skin side up so that it doesn't get soggy. Fry up remaining chicken pieces in the same manner. Serve with a wedge of lemon
