Green Goblin King Salad with ‘Bog of Stench’ Dressing
Serves 2-4
Prep time: 15 minutes
Grill Time: 7-8 minutes
Total Time: 22-23 minutes
Ingredients:
1 bunch asparagus
1 bunch black kale, chopped
1 avocado, cubed
1 cup peas
2 green onions, finely sliced
12-14 Brussels sprouts, finely sliced
For garnish: pistachios and plant-based feta cheese
For the dressing:
1/2 cup cashews, soaked
2 cloves garlic
1 tbsp miso paste
1 tbsp capers
Juice of one lemon
1/4 cup fresh parsley
1/4 cup fresh dill
2 tbsp nutritional yeast
1 tbsp grainy mustard
1 tbsp maple syrup
1/2 cup plant based milk
Salt and pepper to taste
Directions:
Add all the ingredients for the dressing to a high-speed blender, and blend until fully smooth - a couple minutes. Set aside. Preheat grill to high heat (about 400-450 degrees F). Grill the asparagus over direct heat for 7-8 minutes, turning frequently. If you like your asparagus a little bit crunchier, remove from the grill earlier. If you like it softer, cook it a bit longer. Allow to cool slightly before cutting into 1-inch pieces. In a large bowl, add all the ingredients for the salad, including the chopped asparagus. Stir thoroughly to combine. Garnish with feta and pistachios. Serve immediately, or refrigerate for up to 3 days.
