Vegetarians or meat free nights - feel free to replace the meat with any fleshy/substantial vegetables (cauliflower, soya chunks, paneer, tofu) as you'll still get the great flavour. Heck the sauce itself is a gem. I'm a British born Punjabi and your BIR is becoming more and more Desi (traditional homegrown)... Which is an awesome thing in my books. Keep passing on the foodology knowledge my brother and respect going out to you each and every time.

I did almost the exact same thing a couple weeks ago, using thick mutton chops on the bone. I decided to put it all in the oven after the stove top cooking, to let the sheep cook all the way. Came out the best curry I have ever made. Thank you once again for all the great BIR curry videos.

I have been eating BIR meals since the early 80's, two or three times a week - started off with Chicken Tikka Masala, and ended up on Chicken Phall - and no, not at 11.30pm drunk on a Friday, more for early evening meal in restaurant, or takeaway with a hired DVD (yes I'm that old ;)) Also, tried making BIR at home, starting with Pat Chapmans books back in the early 80's and loads of other authors, I have had some great curries, but never 'quite' matched that restaurant taste, texture - experience . . . . I kinda, gave up 10+ years ago, and now generally have a restaurant Chicken, Garlic, Chilli dish (upped to vindaloo/tindaloo strength - depending on restaurant), with mushroom pilaf, and/or chapattis, with my wife having the standard dish + MR rice and garlic naan, we are also both fans of the onion bhajee :) With my wife making some awesome store bought paste based curries at home, fantastic, but still not quite BIR . . . . . @Latifs Inspired, I have watched loads of your videos, and often been tempted to give it a go, but just never got around to it :( HOWEVER, watching this one pot recipe has MASSIVELY INSPIRED me, to get the curry pan out from retirement, and have a go - and many, many thanks for that . . . The thought of cooking a BIR style garlic chilli chicken, the same day (without having to mess around earlier), with base gravy, pre cooked meats, (yes, it will take longer on the day - I appreciate that), has totally captured my imagination - and taste buds . . . . Long story short, Many thanks :)
