These gluten-free cupcakes are made with rice flour for the chiffon cake and cornstarch for the custard cream.
I filled the fluffy chiffon with plenty of cream and kept the decoration simple.
I also wrapped them in dome cups I bought at a 100-yen store.
Custard cream made with cornstarch tends to become powdery.
Continue heating for 2 minutes after it has thickened to give it a smooth texture.
▷Ingredients(12 min chiffon):
■mini chiffon cake
4 egg yolks
30g vegetable oil
30g milk
1 tsp vanilla extract
70g rice flour or cake flour
4 egg yolks
1 tsp lemon juice
80g sugar
▷How to make:
1. Add sesame oil, milk, vanilla extract, and rice flour to egg yolks, in that order.
Add the lemon juice and 40g sugar to the egg whites and beat until bubbles form. Add another 40g of sugar to make a glossy meringue.
Add about half of the meringue from ② to ① and mix. Add the remaining meringue and mix so that the bubbles do not collapse.
4. Put the chiffon dough into a squeeze bag.
5. Line a muffin tin with glassine paper and squeeze out the batter.
Bake in a preheated oven at 170℃ for 20 to 25 minutes.
7. Remove from the molds and allow to cool.
■Custard cream
2 egg yolks
45g sugar
14g corn starch
200ml milk
1 tsp vanilla extract
200ml heavy cream
10g sugar
powder sugar
▷How to make:
1. Beat egg yolks with sugar and cornstarch in this order.
2. Add milk and vanilla extract and heat over medium heat.
3. Heat until thickened, stirring constantly. When bubbles disappear and the mixture begins to thicken, continue heating for 2 minutes, stirring constantly.
4. Strain the custard cream, cover with plastic wrap, and cool in iced water.
5. Beat the cream with the sugar.
Beat the custard cream until smooth and add the whipped cream. Pour into a piping bag fitted with a clip.
7. Poke a hole in the cooled chiffon cupcake and squeeze a generous amount of custard cream. Sprinkle with powdered sugar.
