Love your videos. I have been fermenting for a while but never hot sauce until recently. I started experimenting, got my first batch done of Jalepeno/green tomato sauce. It is delicious but zero heat. I am fermenting some habenero and pineapple now. I'm not going for "dare you" heat but hoping for some zing. It was your videos that gave me the confidence to go for it. I will be picking up some ATX shortly to support the business. Thanks for sharing the knowledge!

I use one gallon glass jars (fermentation jars) Do a search on AMazon.. best place to get them

Allways nice to see new video's from the Grand master hot sauce maker, i managed to make some hot habanero chili sauce and i also did pasturize it just in case mostly because its a hot sauce and it takes some time to eat up all the sauce. In the mean time i also did some fermentations with pumpkin and it really became delicious, little bit bitter taste mostly cause i overdid the days. The hot sauce i stopped at the 14 th day and mostly because i did it with just a simple way as possible but it worked. I realized that it doesnt really matter how many days it takes the faster it gets the fermentation started the sooner you can be done with it. Very nice way of making the food taste richer and healthier. I wouldnt recommend people to use frozen vegetables even if it works, the more you put fresh the healthier will be the result and probiotics is just good for you specially when its directly from the nature and not as from the health stores were you buy them in pills. @@ATXHotSauce I am thinking about getting a web cam or a Go Pro and make some video's of my own. I like to make some good suace's and use it for cooking. I make also seasoning oils to add it in the sauce, i also make broth oil and use that instead of just oil in sauce and cooking. I create my home made Coarse Salt for the fermentation so it is a little procedure that i do before i jump in to the fermentation process. If i manage to get a camera then i will be more then happy to show you how i do my hot sauce. The brine as well i also use as dressing enhancer or just as engridient in making some food.

Atx, Are you able to ferment spices? Do you recommend adding Orange juice or any other type of juices during the pasteurization process?

Yes for sure i add different spices at the initial fermentation. You can add juices but remember that they have a ton of sugar in them and if you don't pasteurize completely then those sugars will jump start another fermentation

My boyfriend and I made fermented hot sauce and the next day it was spoiled . I need some help 😢 We added sea salt water brine ,vinegar ,lemon juice,mangoes , habanero,garlic and sweet peppers. We bottled them up the next day it looked all separated shake it they open like a bottle of soda. We have a pop up shop in 3 days . HELPPP

how long did you ferment it? try not using vinegar during the fermentation ( you can add to taste afterwards ) you want to ferment for at least 2 weeks
