You think it's hard to make deep fry Chinese menus at home? here's easy but delicious way to make great chili shrimp!
《Ingredients》
10 shrimps
potato starch, egg, water, cooking oil
spring onion, garlic, onion
oyster sauce, sugar, ketchup, vinegar, chili oil, toban djan
《Recipe》
1. Get all moisture out from the shrimp. Make scars with knife at inside of the shrimp and push it down until it makes popping noise)
2. 1 cup of potato starch, 1/3 cup of water, 1/3 spoon of egg, 1/3 cup of cooking oil to make the dough.
3. Put oil in the pan for deep frying and heat the oil with mid-temp fire.
4. mince 3 pieces of garlic, 1 line of spring onion, 1/3 onion.
5. When oil reaches min 130 degrees celsius (best is 180 degrees) cover shrimp with dough and deep fry twice. Slightly first time, leave it out for couple mins and properly 2nd time until you see less bubble as it fries. Once done, take shrimp out and put in on a net.
6. Use new flat pan for the sauce. Stir fry 3 spoons of chili oil and minced veggies prepared earlier.
7. Put in 1 cup of water, 3 spoons of sugar, 1 spoon of oyster sauce, 1/2 spoon of toban djan, 3 spoons of vinegar.
8. Put in starch water little by little until you get right density.
9. Put the sauce on top of shrimp then start digging in!
