Lemon Posset & Raspberry Compote Jelly

Күн бұрынThis very easy recipe delivers a wonderfully rich, creamy, tart dessert. The thick and creamy lemon posset is topped with a jelly of raspberry compote. It is a perfect dessert for a warm spring day, served, maybe, with some crunchy shortbread biscuits.

My favourite"" lemon posset'' and raspberries come a close second to lemons..... Yey!!!! Geoff we have warm DRY weather at last.... Nice recipe Geoff, can you tell me what the fat content is of the double cream as i dont see that here in New Zealand

Hi Jeff. Typically double cream has a fat content of about 50%. But, as I say in the written recipe, heavy cream, whipping cream of any cream with a fat content of about 35% will work fine.
