You can use the ration that best suits your taste. You can use all of one or none of one. You can use a lower % too, you can even add in milk chocolate it is as you prefer.

Can you tell me why they aren't that crunchy after they cool? It turns slightly soft after cooling. Store bought ones are very crisp but not the ones baked at home!

Hi The Della Bakery. The biscuits should stay crisp when cooled, if all the ingredients have been measured correctly. It is important, though, to let them cool completely before storing them. If they are still slightly warm when placed in an airtight container then the residual heat will soften them as condensation occurs. Another reason for them softening could be to do with the amoun of humidity in the air. If that is the case put the biscuits into the fridge, uncovered, to cool them completely and then store them.

@@geoffsbakingblog thank you! But even my shortbread butter cookies have a soft crunch to it. I thought of adding baking soda instead of baking powder! I can't understand what's going wrong! I measure my ingredients using a scale or in cups but it's the same!

@@TheDellasBakery Then I think it is likely to be the humidity that is causing the problem. You can try to reduce the liquid a little bit, that might help. Another tip that some use is to store the biscuits with a small piece of bread, so that the bread absorbs some of any moisture in the air. Another tip is to store the biscuits in a zip-lock type bag, since you can press as much air out of the bag as possible. The less air mean less moisture to be absorbed.

Morning Geoff, this is a very similar recipe to the one I make, but I chop up bourbon biscuits in mine instead of using chocolate chips, so there's a slight occasional crunch when you eat them for a different texture. You can use any biscuits, but bourbons or oreos work really well x

I remember my mother used to bake these "toffee cuts" (that would be the literal translation of kolasnittar) in the late 1970s, on our farm in northern Sweden. They were considered good "everyday cookies," but not because they were cheaper: they were easy to make and didn't take much time from the beginning to the end. Offering every visitor - from the mailman to the chimney sweeps and the farmers around - coffee with cardamom buns and several types of cookies was still like an almost religious thing then, so my mother was constantly baking, using the precursor of the Ankarsrum mixer. Kolasnittar are both crunchy and chewy at the same time (something I was unused to as a child).

I used to have Mrs Beatons cookbook but I,m afraid the spine came off and pages fell out and it was binned . I used to think she was an elderly lady but in in fact she was only 28 years old when she died in 1865 .

Great recipe, Geoff!! When I make cheese scones I add about 1/4 teaspoon of smoked paprika which gives a lovely yet subtle 'kick' to the flavour. Hope you're keeping well!! All the very best, Peter A :)

HI Triple Great. That is quite the warm temperature. It is cool and very wet here today. 1.20pm and the temperature is 13C, about 54F. I am glad you like how the scones look. It would be great to be able to share them.

Hi Geoff, I have made one of these before, just not as good as yours tho. How did you stop the sponge from rising into a dome. This happens a lot when I bake Victoria sponges??

Hi Justin. For this one I used a low oven temperature, so that the side of the tin took longer to heat up and set the cake. At a higher temperature I would use wet baking strips to wrap around the tins, that also slows down the edges cooking too fast. If they cook fast the centre isn't cooked and rises up into a dome.

For a bit of that kick that great Ginger Snaps have: add a dash of ground Cayenne Pepper. Seriously, it adds a fabulous dimension to the cookies.

@geoffsbakingblog apparently curds can set like jam, you just have to cook them at a slightly higher temp for a bit longer and don't stop whisking! There are recipes online showing how to do this hun 😊 maybe that would make a good video for you? 👍😉 x
