Let's Make an Aesthetic, Pinterest-worthy Mini Lunchbox Cake from scratch. :)
INSTAGRAM

Ingredients:
4 Eggs
80gm Sugar
120gm Plain Flour
1tsp Baking Powder
30gm Unsalted Butter
30gm Milk
1tsp Vanilla
Instructions:
1. Separate the whites and yolk of 4 eggs.
2. Whisk the egg whites until stiff peaks while adding 80gm of sugar gradually in 3 stages.
3. Add the egg yolks into the meringue and whisk until combined.
4. Sift flour and baking powder into the meringue in 2 stages.
5. Fold very gently making sure not to deflate the batter.
6. Take the melted butter and milk mixture and add 2 scoops of batter and mix until combined.
7. Pour the mixture into the main batter and fold gently until combined.
8. Pour the batter into a 12x8x3 inch pan and smooth the surface. You can use mini 4-inch tin as well which needs less time baking.
9. Bake at 165C for 20-25 mins.
Tips used:
Pink Cherry Cake - Wilton 12, 2
Mint Daisy Cake - Wilton 104, 2
Sunset Cake - Wilton 1 to pipe letters

Aww thank you!!😊 Its from shein. They will send you random wax paper. U never know which one you will get🙈 but most of them have pretty print..

Thank you! For this cake I used whipping cream with touch of cream cheese(like 25%). Trick is to not to overwhip the cream🙂🙂

Thank you. :) I think it was 12-inch length and 8-inch width as I was able to get exactly 6 4-inch layers.

It was just after I had stopped mixing at 2.30min mark. Take 2 scoops of the batter and mix with warm milk/butter/vanilla and add it back to the main batter. 🙂

What liquid are you adding in between the cake layers before you add the frosting? Just water?

It's equal parts water and sugar. Totally optional but keeps the cake soft and moist for a longer time.

Yes, it makes total 6 layers which you can use to make three 2 layers cakes. I did use 3 layers in the video but I would recommend making 2 layers as it will fit snug into the box.🙂

These are tiny 4-inch cakes. Yes, you can. I would recommend doing 2 layers instead of three just to make sure that it fits snug inside the box. :)
