Decided to make some carnitas today in my 24” Southwest Disc in preparation for Canelos fight/Pre-Mothers Day celebration!!! Lets see how they come out!

Awesome video! I have always made carnitas in my caso but have been wanting to do in the disco and you just motivated me to do that lol! Great informative video and just very down to earth. Thanks!

Also if you want to add more flavor add another package of bacon. If you need to stretch it out for more people add more chicken, it’s the cheapest of the meats and the most tender!

enjoyed this video and found the other discada video...suggestion...do another channel with just cooking on the discada for those of us who would not subscribe to this channel because not into fishing. I purchased a discada about a year ago and have yet to use it. You have inspired me to. I do like your style. Very informative and to the point.

You know I’ve thought about it too. My channel was supposed to be just fishing videos. I made that one discada video just as a one off video but the response I got from it truly surprised me. When I did the second one I figured the first one was just luck of the draw but then this one took off too. 🤔

You could try it, just make sure you don't dry it out in the process though.

My wife is Central American, I lived down there when I was in the Army and they don’t do the Caso thing but I bought one about a month ago, we had 15 people over and I bought 10lbs of pork shoulder from the butcher boneless, I actually cooked it the same way before I seen this video and maaaannnn, her Mexican friends said I was crazy because “you need a pound and a half per person” lol being the only gringo there I followed their rules and waayyyyyy too much meat lol (they brought 15lbs on top of my 10), anyway after it was all done I made my wife watch your video lol I hate cilantro too. 90% of my best friends in the military were all Mexican so I had a good idea of how to do everything, plus her friends brought “very hot sauce that I can’t handle” but it wasn’t even a quarter of the spice my hommies in the military used lol I am starting to question her friends Mexicaness lol I’m about to call my friends to come visit from Texas to back me up 😂 great video Sir and thank you for reaffirming what I thought was correct on video ❤

Hell yea that was awesome. Thanks for the back story and you tell them from now on they need to listen to YOU! I hate running out of food but too I hate having way too much left over too. Good thing is you can keep cooking over and over till you perfect your portion size 😁. Next time show them my video and tell them LOOK, THIS MOFO KNOWS WHAT HES DOING. I didn’t say an exact temperature, but you’ll want your heat at medium high when you first throw everything in there to get that good sear. I usually go by the oil, once i start to see a very slight smoke coming off the oil I’ll put a small piece of the meat in the oil, if it starts frying then you’re ready, if you put it in and it just kinda sits in the oil or hardly bubbles, then the oil isnt hot enough.

In Spanish its called a disco, some call it a plow disk and others even call it a cowboy wok. They started out as plow disks with the centers welded closed and used to cook over a fire, nowadays they just make them from regular steel or stainless steel. I got mine from www.southwestdisk.com/

@@jasonnavar7958 I didn’t time the sear but you’ll cook them till the outside is semi golden brown. You won’t get your final color till after you add in all the other ingredients. Just make sure they are all uniform in color before you move on to the simmer stage. You may have to move some out if they’re seared correctly while the other pieces catch up.

Why do I keep seeing all these videos of people adding coke and Oranges and condensed milk.it never turns out good how carnitas is supposed to taste. Half an orange salt pork lard couple cloves of garlic pork butt tiny amount of cumin call it good.

@@CarlosLaguna7883 you know the super greasy good soft flavorful carnitas at most mexican restaurants yeah? That's what I'm looking to make. I've legit tried 30 different recipes following them to the T but none match what I described above. Have you had carnitas like I'm talking about before? I realize there's different styles of methods.
