An excellent video. Last year just b4 thanksgiving my local grocery had on sale " white potatoes"by Heartland so I canned 18 quarts. Within a week all the jars were cloudy with starch and they cook up fine but with a little fuzziness ( for lack of a better word ) but they weren't smooth and crisp. They taste great so I'll keep my eyes peeled for reds on sale. Thanks for the info.

Great overview of the various potatoes - thanks so much! Looks like yukon golds and red will be flooding our pantry. We've only concentrated on dehydrated so far. Thanks!

Thank you so much! Having canned my very first potatoes (I'm new at canning) my first mistake was buying discounted potatoes prewrapped by the grocery store. Thinking it was a great idea to can them, I soon found out after only 1 month of storage the starch rose to midway up the jar! Having no one to ask, I thought I did something wrong. I cannot thank you enough and I now know what to expect from my canned potatoes.

Hi! I really enjoy your videos! And allow me to encourage you to continue producing them! In my latitude is very difficult to find Russert, and the White, Red and Alpha are the most cultivated ones. I really appreciate the starchy flavor of some fried Russerts for a change but we really love the taste of the waxy one, most of all in our everyday home cooking. Thank you again for your posts!

All of them look great! But I was told that you do not can potatoes with the skins on as they harbor the botulism spores. And the NCHFP states to peel before canning them.

I thought spores are killed by higher temps/ pressure and time and that is why pressure canning is effective.

@@FloryJohann from the way it was explained to me, it's a density issue. The skin is dense enough to protect the spore from the heat and they can also have small particles of sand/dirt in it that can protect the botulism spore. 99.9% of the time you will have no issues, but it's that .1% can kill you. It why the old timers in my family don't trust home canned food, they remember friends and family that died from it. You can contact NCHFP and they could probably give you a more detailed explanation.

Your potatoes look beautiful! I new to canning and just canned 25 lbs of russet potatoes. I have a few cloudy jars because I cut certain pieces to small. I will use those potatoes for mashed potatoes! I just subscribed to your channel!

very valuable information thank you this year 2016 purchased presto pressure canner did 4 jars of white potatoes seem to be cloudy a little in the jar they where 3 weeks ago july29/16 now here in Canada they tell me Kennabec and Yukon Gold are just about potatoes you can can using pressure canner I dont no YET!!!!! there fall potatoes here going to do diff ones later next question is whether leave the skin on sure would have to be scrubbed well so thank you going to post this video on my facebook for others

Wow, I'm going to try canning potatoes this year, probably the reds. I have never seen canned potatoes with the skins on. I'll bet they are pretty good! I think I'd make them as creamed potatoes, onions and new peas.

Thanks for the info. I have canned potatoes and they are full of starch sediment and do have a different flavor. I just drain and fry them, not so good to mash, too starchy.

I am looking into canning potatoes for the first time. The books all say to blanch them before canning, many on KZfaq say they raw pack, I am not sure what to do. How did you do yours?

Do you blanch after cutting them? Blanching stops enzymatic reaction, makes a big difference with many vegetables. I've done it both ways. Raw pack with skins on and peeled and blanched. I find the blanched taters always look and taste better, for a very long time.

what are black things on the potatoes and the underside of the lid? I threw the contents away because of it. I have not seen any prepper showing cans containing these black spots on the food. Please help.

I go to the farmers market and buy 20 or 50 pound bags. Much much cheaper that way. Even red potatoes. Best of all you have a bit longer to can them if you store them in the basement .

My russet potatoes came out so starchy they looked like a jar of mashed potatoes. Opened them, rinsed them off and they were fine. I've heard of starch, but that was ridiculous. I followed directions to the T. The quarts prior to that were perfect. Could those potatoes have been older than the first batch?

my cubed russet potatoes had so much starch that the bottom half or so of the jar comes out jar shaped like potato jello, and they were just canned last week :/

I had canned a ton of them also and threw them all out...hubby said he had tried store canned in the past and that is how they tasted...Some people must like them...I used them in a soup...not good and I fried some up to have with eggs for breakfast and they just don't taste good to me, maybe you will like them...please let me know

on Aug 7th I canned Yukon Potatoes, the jars were clear up until today, and now 3 out of 4 jars are cloudy looking, I didn't use the water from the potatoes in the jars, I used clean hot water, I followed Balls directions completely, the seal is still intact and I can pick them up by the lids and they dont come open. Could this be starch or do I have a problem with this batch?

Do you mean there are no RINGS on her jars? You never store canning jars with rings on (unless they are empty or perhaps with dry goods), the suction/vacuum inside the jar holds the lid on. If by chance there is a jar that spoils then the lid would come off but if you had the ring on it might give you a false seal and then you are setting yourself up for a food poisoning situation. cheers.

Canned potatoes, by themselves, are always crappy. It doesn't matter what type, they always taste bad. They NEVER come out tasting like the way they went in. Only way to can potatoes without them getting really icky is to can them in tomatoes. I love dehydrated potatoes so that's how I preserve most of mine. The others go in canned tomato soup. Fortunately, I have two large greenhouses and I have about 20 gallons of dehydrated potatoes (that's a lot). Also, vacuum sealing, then freezing, keeps them pretty good. Keep water to a minimum.

Waxy Potatoes are best for canning Russet Potato not good. Yukon Gold good New Potato good White Potato med Red Potato good
