Making and canning... Hamburger Vegetable Soup! This is a beautiful soup that's great all year long! Click the show more box for more information!
The ingredients and amounts that I used to make 21, 1 Liter jars.
8 pounds lean ground meat
5 pounds carrots
1 full bunch celery
7 pounds red potatoes
4 large onions
7 cloves garlic
7 cans tomato juice
2 cans diced tomatoes
3 cans water
season to taste!

This is probably one of the best videos that I have watched on KZfaq regarding canning. You were so organized and gave quite a comprehensive explanation of what to do and how to do it. I watched one canning video today where the lady was so unorganized. It was so distracting. Thank you. I am thinking about trying your recipe. I have already canned 12 pints of just plain vegetable soup.

Try using half beef broth and half tomato or V-8 juice, instead of all tomato. It will add that depth of flavor you were looking for. Thank you for the video.

I use V-8 juice rather than plain tomato juice.... our family loves it!

SynnovesHome I have a All American Canner 30qt that I can process 14 qts at a time... so when I'm making soup I'll use my 18qt Roaster Oven and let cook overnight then it's ready to go first thing in the morning. This way it also gives me free time to do another project while the sauce/soup simmers! Happy Canning!

Multitasking is great! Canning can take up a lot of the day. With big batches it works out better to break it down....prep one day can the next! Thanks for watching!

Instead of going thru half of the cutlery drawer for tasting, just use one spoon to scoop out the soup and pour it into another spoon( over the sink so as to not make a huge mess) and that is your tasting spoon. Just be careful to not actually touch the two spoons together and you won't have to worry about contamination

Wonderful video! I don't consider myself a canning expert, but I think you did a great job explaining not only how to SAFELY can, but the reasons for each step, and cautions on altitudes differences, etc. Kudos for such a clear and comprehensive overview of the process! Recipe looks delicious! I have seen some DANGEROUS examples of canning on youtube recently, and this was NOT one of them. I have subscribed and look forward to seeing more.

You can always season when you heat it up to eat it which is what I would do because I am “new” to canning with the Nesco, in fact haven’t received it yet……

I love the way you explain every step and the cost as well. I can't wait to have a look at your channel to see what else you have to share. The only thing I would change is adding beef stock rather than water to give it a deeper flavor. That and I canned plenty of beef stock last fall...lol. Thank you so much for sharing. New subscriber

Like the vids thinking about canning don't know to much about it when you wash your jars after the water bath you take the ring off And wash do you put the ring back on

Hello, just wanted to mention that using a small dip bowl is great to ladeling the soup into and then scooping a spoonful from for tasting is very helpful. Keeps from having to waste a bunch of disposable or wash a bunch of reusable dinnerware :)

Thanks for thus recipe :-) I'm a novice canner and your tips are much appreciated. I'm thinking that I may freeze some (without the potatoes) also. I have a question, if you don't mind? It's about your nuwave burner not the recipe lol. Can you can on the nuwave burner? I'm looking for an alternative burner/cooking option when canning besides my stove. Do you have any ideas or ways that you know of? Thank you so much and take care-Debbie

The NuWave can't be used with any canner that is aluminum. Most canners are aluminum! The only thing you can use on the NuWave is.. Precision cookware, stainless steel with magnetic base, enameled iron and steel, cast iron. In other words if a magnet doesn't stick to the bottom of your pots or pans it can't be used with it. I have only seen one canner that is made with stainless steel it's called.... Fagor pressure cooker/ canner. but I still don't know if it has the right base for the NuWave. I have some stainless steel pots that still can't be used with it. As for any other extra burner that can take on a pressure canner and the weight of it, I haven't found one yet! But like you I'm looking too, it sure would free up the stove! Thanks for watching!

hi did you ever figure that out? i freeze framed the video and it looked like 1.36 L = just under 1.5 quarts. did you make the soup? how was it?

Hi CountryGirl. I'm Swedish, we moved to Canada when I was little. I live in Southern Ontario. Canning is one of those things that when you start you can't ever see yourself not doing it life! Glad you liked the video!

Wow, this soup looks amazing and I have got to put this on my to try/do list. I will start by canning chicken stock but as I get the hang of things I must try this out!! I had no idea that spices will intensify over time. Thank you for taking the time to explain lots of details.

The rule of thumb is... hot jars, hot ingredients. Jars can break with extreme temperature differences. Thanks for watching!

Question: since you cooked all the veggies before you put them in the jars won't they be mushy after pressure processing for 90 minutes?

Why all the spoons for tasting? If you don't have to sterilize jars and 240 degrees kills botulism why be so sterile with tasting?

Weegie late reply, but enzymes from your mouth will touch the spoon, and even the tiniest amount will cause the soup to begin digesting in the jars. Gross. But, she could just use one spoon- just use the big stirring spoon to drop a bit onto the spoon, for tasting, so she doesn’t need to dip.

The high temperature of the canning process will denature any enzymes present and stop the digestion process.

I hope it's ok to ask but are you married? are you a stay at home wife? I ask because I'm sure this takes lots of time. how long does canned food like this along with other kinds of food last for? can it be years?

Hi luv2craftcards. Yes canning, preserving, dehydrating, gardening, doing as much as you can for yourself does take time.....but when it's a lifestyle that you are used to, and choose to do and love to do.... it somehow just works. The books will tell you to rotate all canned goods in a year cycle BUT a lot of canned good will keep on the shelf's for years and years. I try to keep my canned goods on a yearly rotation but have had some on the shelf for two or more years and they where fine. Check your food often use your nose! When in doubt throw it out!!

As a homemaker, I stretch our budget with things like canning. Right now, my daughter and I are saying our good-nights and in the background we hear ping! Ping! Ping! It's rewarding to save money, eat healthy, and share time together. I like the cost breakdown. When people ask me if it's worth the time I ask them how many hours of work did you blow on your movie and dinner and drinks...plus or minus the sitter?
