​@@andrebrown1753 I've honesty never seen unpeeled baby potatoes in a curry goat dish. We usually peel medium sized potatoes and cut them into small cubes. Maybe that was his own personal twist as a time-saver or something

My favourite dish is this guys "pepper pot Stew". I'm obsessed with it. So good I almost look forward to winter here in Canada because it is such a warming comfort food.

Love the fact he didn't use too much garlic. Garlic flavouring should never be too pronounced. It can ruin the balance of dishes.

@@sanjaybailey835 No. Culture is when you call it what it has been called by the originators. Mannerisms is just how you say certain things and act a certain way, based on your upbringing. If you grew up in a culture that is very different to the culture of your origin, then you will begin to pick up on their mannerisms. In the same way that many Chinese-Americans do not know how to speak their mother language, someone who grew up in Britain might call curried goat, goat curry.

Two beautiful dishes! Question: why chicken stock? I would think beef stock would be closer to goat. Or, does the chicken stock bring out something that beef stock would not?

I know your comment is old. But in the Caribbean we tend to use chicken for stock since it wouldn't be considered a waste.

Sorry chef, I am a trained chef and I can tell you this, one of the first thing you are taught is how to pair spices ---Garlic, allspice does not pair with the ackee and salted fish
