Ingredients For Dough
• Wheat Flour (गेहूं का आटा) - 2 Cups
• Salt (नमक) - ½ Tsp (Or To Taste)
• Baking Soda (बेकिंग सोडा) - 1/4 Tsp
• Ghee (घी) - 2 Tbsp
• Water For Kneading Semi Soft Dough
Ingredients For Stuffing
• Sattu (सत्तू) - 1 Cup (125 Gms)
• Onion Finely Chopped - ¼ Cup
• Green Coriander (हरा धनिया) - 1/4 Cup (Finely Chopped)
• Mustard Oil (सरसों तेल) - 1 Tbsp
• Green Chilies (हरी मिर्च) - 1 (Finely Chopped)
• Ginger (अदरक) - 1 Tsp (Grated)
• Salt (नमक) - 2 Tsp (Or To Taste)
• Little Water To Bring Stuffing Together ( Optional)
• Pickle Masala (अचार का मसाला) - 1 Tbsp
Ingredients For Chokha
• Tomatoes (टमाटर) - 2
• Eggplant (बैंगन) - 1 (300 Gms)
• Garlic 4 cloves
• Onion finely chopped ¼ cup
• Boiled Potatoes (उबले हुए आलू) - 3
• Lemons (नींबू) - 1 tbsp
• Green chilies (हरी मिर्च) - 1 (finely chopped)
• Ginger (अदरक) - 1 tsp (grated)
• Green Coriander (हरा धनिया) - 1/4 cup (finely chopped)
• Mustard Oil 1 tbsp
• Salt as per taste
• Rosted cumin seeds 1 tsp
• Red chilli powder 1 tsp
HOW TO MAKE LITTI CHOKHA
FOR CHOKHA :
• Take eggplant and tomatoes, grease with oil. Then put over a net and roast over flame. Flip at intervals and roast till skin turns black.
• Once roasted take out the eggplant and tomato in plate to cool, then peel the skin.
• Add boiled potatoes to the peeled tomatoes and eggplant. Mash well. Add salt, finely chopped green chilies,ginger grated, finely chopped green coriander, finely chopped onion, juice from 1 lemon, mustard oil and Mix well.
• Chokha is ready.
FOR DOUGH:
• Take wheat flour in a mixing bowl, add ghee, salt, carom seeds, baking soda,Add water in small portions and knead soft dough.cover and keep dough aside for 15 minutes.
FOR STUFFING :
• Take sattu in a bowl, add salt, chopped onion, grated ginger, pickle masala, green coriander, finely chopped green chilies, mustard oil, juice from 1 lemon. Mix all the ingredients well. If seems dry add some water and mix again.
STEPS TO MAKE LITTI :
• Meanwhile grease hands with ghee, squash the dough, Break the dough into small lumps, give shape of peda.
• Make it hollow with thumb and fingers givin bowl shape, put stuffing, lift sides, close the litti. Keep in plate. Prepare all likewise.
• Bake at 190 degree celcius for 20 mins ( do check once at 15 minute)
• Char littis on the gas flame for that smoky flavor ( optional)
SERVING :
• Once the littis are ready, dip them in ghee if desired or break and pour ghee over them. Take a bowl full of chokha and relish it while they are still hot.
