For making the BHURJI 📌📌Ingredients: • BUTTER 1 TBSP • OIL 1 TSP • ⁠JEERA 1 TSP • ONIONS 1 MEDIUM SIZED (CHOPPED) • TOMATOES 1 MEDIUM SIZED (CHOPPED) • GREEN CHILLIES 1-2 NOS. (CHOPPED) • GINGER 1 INCH (JULIENED) • ⁠GRAM FLOUR 1 TSP • ⁠BELL PEPPERS • TURMERIC POWDER 1/2 TSP • RED CHILLI POWDER 1 TSP • ⁠KITCHEN KING MASALA 1 TBSP • ⁠Water 1/4 cup • ⁠PANEER 250 GM • SALT TO TASTE • MILK 1/2 cup • FRESH CORIANDER AS REQUIRED • FRESH CREAM 1-2 TBSP (OPTIONAL) Method: • In a pan add the butter & oil, heat it until the butter completely melts. • Now add Jeera, onions, tomatoes along with green chillies & ginger, stir well & cook on high flame for 1-2 minutes. • Further add gram flour & lightly roast it on medium flame, the gram flour acts like a binding agent as it holds the water that releases from the paneer and also enhances its taste. • ⁠Add bell peppers • Then add coriander powder, turmeric powder red chilli powder, kitchen king masala stir well cook for 1 minutes then add hot water as required & continue to cook for another 1 minutes. • Once you have cooked the masala add the paneer into the pan by crumbling it with your hands along with a small handful of fresh coriander, mix the paneer well with the masala & add milk as required to adjust the consistency of the bhurji & cook for 1-2 minutes. • Further add the fresh cream give it a nice stir & finish by sprinkling some more fresh coriander. • Your paneer bhurji is ready.

Chole Recipe Serves 4: Overnight Soaked Chole 2 cups Baking soda 1/8 tsp Salt 1 tsp Water 4-5 cups Cook for 5-6 whistles on medium flame or till they are soft For Chole Masala Red chilli 3-4 Coriander seeds 1 tbsp Cinnamon stick 1/2 inch Big cardamoms 1 Bay leaf 1 Black pepper 7-8 Cloves 4-5 Jeera / cumin 1 tsp Slightly roast all the masala and grind in fine powder For tomato puree Tomato diced 1 cup Green chilli 1 Ginger 1/2 inch For tea water boil 1 tsp tea leaves in 2 cups of water for 1Minute Ghee 1 tbsp Jeera 1 tsp Hing 1/8 tsp Red chilli whole 1 Ground chole masala (add full ) Tomato puree Cook all for 1 minute on low flame Add Boiled chole and tea water Add salt to taste and anardana 1 tsp Add freshly chopped coriander Let chole simmer for 10 minutes on low flame And it is ready Serve hot ….
