DISCLAIMER
I HIGHLY RECOMMEND-MARINADING THIS CHICKEN AND OR BRINING
(I didn’t because of the time I was working with but I do recommend)
Chicken wet dredge
1 cup flour
1/2 cup cornstarch
1/2 tsp baking soda
1 tbs salt
2 eggs
1 cup water
Optional, 4 drops Orange food
Dry batter
2 cups flour
1/2 cup cornstarch
2 tsp of each seasoning
Garlic powder
Onion powder
Cayenne
Smoked patina
White pepper
Dill
Turmeric
Oregano
Cajun seasoning
1 tbs garlic powder
1 tbs onion powder
1 tbs pepper
1/2 tbs white pepper
1 1/2 tbs cayenne
1 1/2 tbs smoked paprika
1 tbs oregano
Cajun gravy
1 pound ground beef
1 bell pepper
1 small onion
2 tbs Cajun seasoning
Salt + peppa
2 tbs flour
2 cups chicken broth
Buttermilk biscuits
2 1/2 cups flour
2 tsp baking powder
1 tsp salt
3/4 cup buttermilk (add until it comes together)
3 tbs honey
1/2 cup cold butter

I made this and it came out pretty good. The only thing I did differently was putting some of the dry batter seasonings in the water batter. I also used a little bit of accent in the wet, dry, and cajun seasoning. There is nothing wrong with it having a yellow color. If you look at any behind the scene videos of Popeye's it's yellow. It looks almost like a straight egg batter or some yellow cake mix. I definitely agree with the suggestion to brine or marinade. I dry-brined mine in the cajun seasoning overnight since that's what they do at Popeye's. I also added a couple dashes of Cyrstal's Xtra Hot because I've seen that bottle lying around in Popeye's. There is something I smell whenever I pass by Popeye's, but I can't make out what it is. I'm not sure if it's Garlic powder or one of the other seasonings

Child that gravy though. I didn’t do it the exact same I was missing a few ingredients so I substituted and it still turned out amazing. I joyed dirty rice with the left over meat also. This is gonna be added into dinner rotations!
