Because he was sick. If could use haki then most attack wouldn’t have hurt him. SPOIKER Like marco was shocked that squard could stab whitebeard, insinuating that wb has future sight from observation haki like katakuri but because of his illness he could use haki. Marco said in the past he would have never been able to stab whitebeard from the back, also we see how a sleeping whitebeard could sense ace wanting to kill him in his sleep.

He is using Haki, a lot of people are - it's just not visually shown because it's partially shown from Luffy's perspective and because he isn't trained in it, he cannot see it.

Don't want to spoil but we know he had conqueror's and much more in terms of haki which he did not use. Even Rayleigh who isn't Whitebeard's match showed/used his haki much more pre-time skip and before they started colouring it.
