I am sure that every cheese dreams of becoming a Lviv cheesemaker. This is one of the most delicious cheese desserts. So airy and gentle, it will make you forget about everything in the world and completely indulge in this taste. But I wouldn't be me if I didn't add something of myself to the recipe. This time I decided to replace the traditional chocolate for this recipe with salted caramel. See for yourself that the taste is just great!
Portions: 6-8
Preparation time: 30 minutes
Cooking time: 60 minutes
Lviv cheesecake recipe
800 g of 9% cheese
2 potatoes
50 g of butter
180-200 g of sugar
1 pinch of salt
4 eggs
1 lemon
1 orange
1 tsp. vanilla sugar
50 g raisins (optional)
1 st. l. flour + 1 tbsp. l. flour to sprinkle the form
Caramel sauce recipe for Lviv cheesecake
For the sauce:
150 ml of 33% cream
150 g of sugar
1 pinch of salt
How to cook Lviv cheesecake
In a bowl, combine the following ingredients: 800 g cheese, 180-200 g sugar, 4 eggs, 1 tbsp. l. flour, 1 tsp. vanilla sugar and a pinch of salt.
Grate the zest of 1 lemon and 1 orange on a fine grater. Add 50 g of soft butter.
Beat all the ingredients with a blender until a homogeneous glossy cream.
Boil the potatoes (2 pcs.) In a "uniform" and allow to cool completely. Peel and grate the potatoes.
Put the potatoes in the cheese mixture and using a silicone spatula gently mix the mass. Prepare a baking dish - grease with butter and sprinkle with flour, getting a "French shirt". Transfer the cheese mass into a mold and flatten. Bake in the oven at 180 degrees for 60 minutes.
How to cook caramel sauce
Melt 150 g of sugar with a pinch of salt in a frying pan. In no case do not stir the sugar with a spatula, so as not to start the crystallization process. You can only shake the pan from side to side to speed up the process. Add 150 ml of warm cream.
Very actively mix the sauce with a whisk to dissolve the hardened caramel.
Stir until the sauce is smooth. Serve Lviv cheesecake cold, sprinkled with salted caramel. Lviv cheesecake with caramel sauce is ready!
