Could a counterargument be that because all of the Bible was written after evil came into the world, the actions/characteristics we ascribe to God are looked at as good because of our way of understanding good/evil now? Before then, couldn't we have said that God existed and the "all goodness" would have just been normal? Please excuse my ignorance on this topic

Sometimes philosophers overthink things. There can easily be a utopian city/society without crime. Read the last chapter in the last book of the Bible. It's gonna happen.
