Maguro no tataki (tuna tataki) is a dish with half-cooked tuna that is eaten cold.
It is quick and very easy to make.
For two people you will need :
- 250g of tuna
- Yuzu ponzu (or soy sauce) www.satsuki.fr... or www.satsuki.fr...
- A piece of ginger which I will grate afterwards
- One onion
- A bowl of very cold water (you can add ice cubes if the water is not cold enough)
Preparation:
- Chop the onion finely (or with a mandolin)
- Soak the onion in water (this prevents it from stinging too much)
- Grate the ginger
- Chop some shiso (you can use chives instead)
- Heat a frying pan on a high heat with a little vegetable oil
- When the pan is hot, grill each side of the tuna
- Immediately after cooking, plunge the tuna into cold water (this stops the cooking process and hardens it)
- Slice the tuna finely
- Arrange it on a plate
- Add the onion, ginger and a little shiso (or chives) on top
