You could include a neck cylinder so you could display a helmet as well

When it's time to print the templates, check out my printing tutorial video. I show how to scale up or down the templates. In the Etsy listing for the templates, the last picture is a sizing chart. :)

what do you do for displaying a costume that has shoes/boots?

For my cosplays I just don't display them with boots since I use the boots for multiple costumes. You could just not make a base and put the legs of the dummy in boots, but it would have to lay against a wall to not fall over. (Or add a support in the back to keep it standing on its own)
