OMG!! I was always so intimidated to try canning but I finally bought a water bath canning kit and made strawberry preserves this weekend with fresh strawberries I picked from a local farm. I made a lower sugar recipe and this was a HUGE hit and so much fun!!! You really can taste your berries and its not too sweet. My next venture is peach and apricot preserves. Thank you Becky!

You go girl! I am doing the last of my frozen berries I picked I hope it turns out good lol I took a cup of each of my frozen berries, straw berries, blue berries, black berries, raspberries then added 1/2 cup of each to make my 6 cups , had no pectin but I did have strawberry jello so doing that along with sugar… taste great so I pray it does thicken

Who knew rolling boil is also known as roiling boil 😃 verb gerund or present participle: roiling 1. LITERARY make (a liquid) turbid or muddy by disturbing the sediment. "winds roil these waters" 2. US make (someone) annoyed or irritated. Loved watching this and when Becky mentioned pancakes and french toast I could have killed for that strawberry 🍓 jam. ❤️🔥❤️

I came to the comments to ask about "roiling" as opposed to "rolling". I've never heard of roiling boil, only rolling boil.

I'm sooo happy I found you. I never found somebody so close to what I want with my garden and house, as in a lifestyle! (the garden, the pantry, the soap, tea and also gifts) I'm really happy I found you and we are the same age!!! Never expected that, you have so much knowlegde and I can learn so much of you. I love this video! One suggestion: maybe when you can something like jam or relish, and you have a bit extra you put in the fridge, perhaps put a little clip at the end, showing you spreading it on toast or just showing the consistency, and giving it a taste. It ups the satisfaction for the viewer to really see the end product in action. Of course this won't work when you have a major canning day with multiple recipes, but at the end of this video I kept thinking "I wonder what it looks like fully jelled? I wonder if she was satisfied with the flavor?" Keep making great content!

BECKY!!!!! If you really love the flavor of the real fresh strawberries in your jam...then don't make cooked jam!!! You should make freezer jam!!! Find the recipe in the Sure Jell box. You still put it in jars but don't have to can it...just put your jars in the freezer. It is quicker, easier and tastes so much better!! It's like eating them right out of the garden!! But then it's taking up valuable freezer space. I could see this being a good option for small amounts but not for large batches like this and long term storage

Going to have to try this. BTW, you probably already know this, but if you soak your strawberries in a bath of water with a little vinegar, then rinse, and let dry, they will last a week or 2 in the fridge without molding. Love watching your videos- thank you for sharing. :)

Have you ever made Jelly/Jam from Plums? I make plum jelly and oh my goodness is it amazing. I make about 30 jars every year for our family and to give away. Not only does it taste amazing but the color is so beautiful. Our son lives out of state and when he comes home, he always asks for a pint or two of the plum jelly to take with him.

I do 1 measure strawberries to half measure sugar and that's it, no pectin, salt or anything else, I add vanilla beans if I have them and just cook on low to medium heat, stir and remove foam- it takes longer but you get the best strawberry jam ever. I don't know why complicate things. I wash my jars and put them in the oven to disinfect and put hot jam in hot jars.

@@AcreHomestead I forgot - clean the strawberries and put the sugar in and leave it till the sugar melts, you can leave it over night, and you don't need to cut or smash the fruit, it falls apart while cooking and you get small pieces intact. What I've learned watching my mom and grandma is how to make my life easy, so I do small batches, and I put it on the stove on Sunday morning, you don't have to stir it like when its on high heat and the whole house smells amazing :) I know its done when i put spoonful on the plate let it cool, tilt and if it wrinkles while moving it's done. Same process for plums ( I always add cinnamon), but for apricots you want it hot and fast so it doesn't change color. Hope this helps :)

That looks delicious! Just a tip I’ve been doing for years. I use my turkey roasting pans to process my jelly. I can fit 11 jars at once. I’ve never had a problem with them not sealing I use them right on the top of the stove with the lid on some people have a problem because the water doesn’t cover the top of the jar by 2 inches, but I’ve not had a problem with it. just what I do, my kitchen my kitchen my rules. 😉☺️

I know how to can jam because we made lots of jam when I was younger. Now i have a house full of kids so i don't have time to make jam but i pick all the berries from our yard we have raspberries, blueberries, strawberries that I grow but we live in Tennessee and we have wild blackberries everywhere so I pick tons of Blackberries and my mom picks all the berries in her yard she make a quadruple berry jam using all the berries I give her it's enough to feed 3 households for the year. I can the tomato sauce and my mom gives me all the extra tomatoes and peppers from her garden plus all the extras from my garden so I make all the sauce and she makes all the jam.

I have never commented before but really felt that I needed to say that you are the only person who has actually described what a rolling boil is, I am 74, living in the uk and make a lot of jam but never actually knew what rolling boil meant (my husband's favourite is Rhubarb and vanilla) so thank you I absolutely love all your videos.

Watching you make strawberry Rhubarb preserves has me salavating!! I can't find it in Whole Foods & I love it ! Sadly hubby doesn't like rhubarb at all, strawberry🍓 he loves. I've had double wrist surgery, so I can't do a lot if the things I used to anymore. I wish I lived closer to you, I'd buy some of your preserves. You'd have a booming cottage industry! 😇🥰 Awesome job Becky!!

Looks delicious! I don't bath the jars. I fill the jar with boiling jam, I clean the rim and close with the lid, then I turn the jar upside down and let it cool completely. I use simple lids, even recycled ones.

I make strawberry jam here in Mississippi when the strawberries are brought to our local market. I make the freezer jam which is so good.
