Today I am going to show you how to make dried scallop, dried shrimp and dried mushroom at home. These are widely used chinese ingredients and they can be difficult find in some countries. If you look up online, the price can scare you away. Especially for the dried scallop, it could be 100 dollars a lb. But it is very easy to make it at home and it will be way better quality plus I will also talk about tons recipes that you can use with these dried ingredients. So let’s get started.
Dried Shrimp (干虾米、金钩海米)
- Season 1 pound of shrimp meat with 1 tsp of salt and 1/2 tsp of sugar. Let them sit in the fridge for 1 hour.
- Use a non-stick pan to cook the shrimps on low heat for 8 minutes or until all the shrimps turned into an orange color.
- Set the dehydrator temperature at 135 F. Dehydrate the shrimp for 8 - 12 hours depends on the size.
- Tip: If you are using frozen shrimps from a package, you must read the label. If you see that the salt is on the ingredient list, you will have to add less salt.
- Store the dried shrimps in a sealed container and put them in the freezer. It will stay good for a year.

Dried Scallop (干瑶柱、干贝)
- Season 1 pound of scallop with 1 tsp of salt and 1/2 tsp of sugar. Let them sit in the fridge for 1 hour.
- Use a non-stick pan to cook the scallops on low heat for 5-6 minutes or until all the scallops are changed color.
- Set the dehydrator temperature at 135 F. Dehydrate the scallops for 8 - 12 hours depends on the size.

Dried Shiitake Mushroom (干香菇、干冬菇)
- Seafood contains amino acid so you need to add some salt to create the reaction so you can get some MSG out of it. Mushrooms already contains MSG so you don’t need to season it. You don’t need to pre-cook it either. You just directly put the mushroom on the rack and dehydrate them. No matter if you use high temp or low temp. The taste will come out the same.
- Shiitake is the most popular type for making dried mushrooms. Yes, you can use other kinds but the smell and the taste are going to be different.
- Store the dried mushroom in a sealed container. It will stay good at room temperature for a year.

@@linkinsam1796 Yeah, I remember she did a Vegan Oyster sauce recipe. But, I could of swore she showed in one of her videos how to prepare Oysters to be used in sauces/broths? ( Aka she showed the steps to make a Oyster base to be used to build a wonderful sauce or soup-- but didn't show the other stuff that go along with it.)

Mandy I am so glad I am a patreon supporter. I just love your work. I'm a huge fan of authentic Chinese cooking and used to live in San Francisco with easy and free access to all of these ingredients. I used to love to snack on dried scallops on my way home. They are actually great. I haven't had access to dried scallops and as you said they are extremely expensive online. This tutorial is just what I needed. I don't think there is anything else out there like this video. I thank you so very much for a well-produced video and an explanation as to why to use the sugar and salt and the correct temperature. Mandy I bought these savory things from China town over the years. Learned a lot from your video. I tried to make dried scallops before but it didn’t taste quite as good as the ones I’ve bought at China town. I only salted the scallops no sugar and blanched them before putting them in the dehydrator. The scallops were good but didn’t have the flavor as the ones I bought. I must try your method. As far as shrimp I didn’t attempt to dry them. The last part of your video on the white things that are on the scallops was very valuable because I’d just discovered that on the last package that I had bought a while ago that was in the freezer. Debated on throwing them away but now I know their still good. Thank you for the great content on your channel and please make a video on making oyster sauce.

Yes! Yes! Yes! I would love your Oyster Sauce recipe! These are what I call "Nuts and Bolts" recipes. Completely from scratch, made with good ingredients. I had no idea MSG was naturally occurring in these foods. I have eaten these foods with no problem. At other times, (several decades ago), I had severe reactions at restaurants to the point of temporary asthmatic symptoms and losing my peripheral vision. This was in the 80's, so chances are there may have been extra msg added to the recipe. I am excited to know these recipes and really appreciate how you've explained things. I absolutely LOVE dried shrimp and scallops! My mom uses them in traditional Chinese cooking and they always make things more delicious! (Still remember how dried shrimp is a MUST HAVE in turnip cake, one of my favorite asian dish. Yum!)

Hi. Thank you for the very useful content. I live in Thailand. I have some tip used here to save time in de-shelling the fresh shrimp. You might cut the heads and save them for stock making later but leave the body shell intact. After dehydrating, put the whole bunch of the dried shrimps in straining cloth and wrap it tightly. Hit the wrapped cloth on a hard surface for a minute. All those shells will be separated from the shrimps. To keep the flavor which is diluted by boiling you may also steam the salted fresh shrimp as alternative to frying in the pan.

Maryann Larsen if you vac seal it, throw in a moisture absorber and keep it in a cool/dark place you could potentially store it for years. Always smell anything stored for a long time before using to see if it has gone rancid!

Great video! Your knowledge is extraordinary! And yes, do the oyster sauce video, please. I don't own a dehydrator but I have forced-air heating and live in a northern, cold climate. I use the late fall and winter months to dry my food. I set up racks over the heat vents and dry my food all winter using the heated air from the furnace. It doesn't cost me a dime because the heat has to run anyway. As an example, mushrooms will dry in about 24 hours. And the heat isn't hot enough to cook anything, but enough to dry quickly without spoilage. Have never dried fish or other seafood but will give this a try this winter. Thanks!
